Lightweight and compact, the Ooni Fyra 12 portable pizza oven can be toted up and down from the roof when needed. It’s the least expensive model the company currently sells. And best of all, it is fueled by wood pellets taht you feed into a hopper at the back of the oven. No stoking flames, rearranging charcoal or logs, or (god forbid) touching a propane tank in any way.
These features make Fyra 12 an appealing option for many types of cooks.
Ooni has made amazing outdoor ovens throughout the years. We have tested several of them, and they are consistently high in quality and perform well. This review will be about the Ooni Fyra Pizza Oven, which is the fourth installment of the Ooni Series.
I will be honest and admit that my first few pizzas did not turn out as well as I had hoped. I was disappointed that the first few pizzas were not as good as I had hoped. They were too burnt in one half and not done properly in the other. It was generally agreed that these were not as good and as delicious as Franco Manca's.
It was very disappointing to receive my Ooni, with the intention of making pizza the next day, but to find out that I didn't have the necessary materials, including a fire starter, pizza peel, and wood pellets. None of these items come in the box. You should not purchase the Ooni pizza peel. Make sure you get one that is narrow and thin enough to fit your pizza and enough space to shift, shake and angle in each direction. This one is great! Although you could use a wooden peel, I found that I needed the thinness and strength of the metal to maneuver well.
The Ooni Fyra boxed pizza oven weighs only a few pounds and is easy to carry around.
Ooni's lowest pizza oven is a lot more fun than it sounds. The learning curve for some cooks may prove too steep.
The pizza oven kept its temperature very well as long as it was topped up with pellets. I was able take out one pizza, open the door, and then prepare the next pizza. It took no time at all. It was unnecessary to wait for the oven heat up to again.

I baked a batch, took the dough to the roof and made the oven. The rest was trial and error, numerous pizzas, multiple rooftop parties. Many compliments.
The oven doesn't come with a thermometer so you have to guess when it will be ready to heat. In most cases, however, it only took about 15 minutes to heat up. If rolling flames can be seen along the roof, it's ready to go.
I preheated the Ooni Fyra for 30 minutes, then let it cool off. After that, I wiped the inside with a dry kitchen towel. Ooni tells me that this is essential to do to remove any residues left from the manufacturing process.
The chimney vent can be adjusted to increase the heat within the Ooni Fyra. You can open the vent by removing the chimney cap. This will naturally increase the airflow within the oven, and thus raise the internal temperature.
I only have two complaints about the overall design: The peephole in the door, there to let you check on a cooking pie without letting out heat, is too tiny to actually see through. And the fire box in the back is also too small, so it's difficult to maintain a consistent flame.
The Fyra 12 is easy to light: load the hopper with pellets, ignite the fire starter, add more pellets, sit back and drink a cold beverage. It also preheats fairly quickly. On average, the Fyra 12 takes about 15 minutes to reach the ideal temperature (900 to 950 degrees Fahrenheit), assuming the weather cooperates. For Neapolitan pizzas, you want your oven at 950 to 1,000 degrees.
My favorite thing about the oven is how easy it is to use. The wood pellets and fire starter combo could not be simpler, and so long as you keep the hopper filled to the top (and don’t, as I did on one occasion, forget about it while eating pizza for 45 minutes), you’ll be rewarded with consistent, very high temperatures. The first time I used the Fyra, I was scared about getting the pizza off the peel and into the oven, not maneuvering the pie around the oven correctly, or otherwise ruining dinner by having no experience working with a pizza oven before, but the entire process was intuitive. Without ever interacting with live fire, you reap all of the flavorful benefits in your cooking.
First, you need to take out the chimney cap. Next, remove your chimney cap. I used only two handfuls to start following the guidelines. After that, you add a firelighter on the front of your pizza grate (I used Ooni Firelighters, which I had been given), light it, and then push the grate in the back.
It takes up very little space in our shed, which is always an advantage when it's already jammed to the ceilings. This allows us to store it away when it is not in use. Ooni covers are available for this oven. This cover comes with carry handles that allow you to easily transport it to the beach, to a friend's house, or even camping trips.

Overall, pellets have many advantages. They also burn very efficiently as previously mentioned (though this last point can be debated when cooking at high temperatures to make pizzas).
There are two things that I don't like about the overall design. The peephole in front of the oven, which is supposed to allow you to inspect the temperature of the pie, is too small for me to see. It's also difficult to maintain a constant flame because the firebox at the back of the stove is too small.
Ooni Fyra 12 is also capable of cooking other foods, as long as you have oven slots that can hold your cookware. Ooni offers recipes for items such as duck breasts or banana bread. These can be cooked the same way in wood-fired ovens, rotating to face the heat source. The skillet can be used, but you will need to remove the skillet from the oven and turn the food within the pan. Ooni solves this problem by making its own cast iron skillet, which has a removable handle. I find this fussy. Also, the pan is flimsy and tiny, IMO. So I will stick with pizza.
The pizza oven arrived in a compact box that was really easy to carry out to the garden. I was impressed by how small the packaging was and couldn’t believe there was an entire pizza oven inside.
It is so easy to use. The combination of wood pellets, fire starter, and fire pellets is extremely simple. If you fill the hopper to the top, you will be rewarded with consistently high temperatures. The Fyra was my first experience with pizza ovens. I was nervous about how the pizza would be handled. The flavorful benefits of cooking with live fire are all available to you without having ever touched it.
I love how easy it is to cook outdoors and clean up afterwards. The Fyra 12 is no exception. Even with an oxygenated flame, soot buildup can be a problem. You don't have to clean up one thing. Two chimneys are part of the Fyra 12 -- one for smoking and one for pellet-loading -- which have various removable parts. All of these parts can become filthy after a cook. The pizza stone is easy to clean and requires little maintenance.
However, these accessories can quickly add up to the cost for your pizza oven.
Before cooking pizzas in the Ooni Fyra I ran it for 30 minutes at high temperatures and allowed it to cool down, before wiping the inside with dry kitchen towel. Ooni says this is important to do in order to remove any residues from the manufacturing process before cooking in it.
My recommendation: have two cooks — one focused on flame maintenance, the other focused on pizza assembly and cooking. Also, get an infrared thermometer; it's more or less essential with all the variability in heat.
We liked: Well, everything, really. The results from the Ooni are quick, crispy, tasty and presumably healthier than a standard takeaway � and experimenting with cooking times, dough types and toppings is a lot of fun. Sure, you can cook a frozen pizza in an Ooni oven, but that definitely kills some of the authenticity. You might also struggle to get an even bake. Since the frozen pizza is, well, frozen, the outside of the pizza will cook much faster than the inside of the pizza.

If the top of your pizza is burning while the base remains undercooked, this usually means that your baking stone isn't hot enough. The middle of your baking stone should be 750�F / 400�C or higher. 28 Jan 2022
