I love the simplicity of using the oven. It's easy to use the wood pellets and fire starter combination. As long as the hopper is full (and not, as I did once, leave it empty for 45 minutes), the oven will produce consistent, high temperatures. Although I was initially nervous about getting the Fyra into the oven, not knowing how to properly maneuver it around, or if I would ruin dinner, the process was very intuitive. All the flavors in your cooking are available to you even if you have never used a live fire.

It also takes up minimal space in the shed (always a plus point when it's already crammed to the rafters), so we can easily store it when not in use. If you don’t have storage space, you can also buy an Ooni-branded cover to fit this particular oven. The cover also has carry handles, so you could easily take this to the beach, a friend’s house or even on camping trips too.

Simply remove the main oven body from the box, and then fold the legs that support it. After the grate has been inserted, slide the pizza stone into place in the oven's base. After the main chimney (the longer, taller portion at the front) has been inserted, lock it in place and then insert the fuel hopper (the smaller cylindrical at the back). The chimney cap and door can be attached and you are good to go.

As it is almost impossible to cook pizza in the oven without a good pizza slicer, I recommend that you get one. I am also looking to purchase another one to help me set up a small pizza production line. This is not necessary if you cook for just four people. But if you have to cater for many more people it might be useful.

The Fyra 12 is awesome, with some caveats. The Ooni-branded pellets and fire starters are a must, which is annoying, but your pizza will thank you. And you need to stay vigilant about keeping the hopper full of pellets if you’re making many pizzas in a row. But if you’re down to keep those things in mind, I can’t recommend it more highly. It’s as low maintenance as a wood fired pizza oven can get and produces stellar results in a sleek, compact format that folds away to store when not in use. I am excited to use the Fyra 12 again and again—already planning a pizza party for when my parents visit next month, which is a true testament to how well it works. I could take them for pizza anywhere in New York City! But now the stuff I can make at home is just as good.

What does this all mean for the end-user? The Fyra 12 consumes a lot more pellets than it needs. The proper flame to cook more than one pizza takes away from the main pizza making process.

Two cooks are a good idea -- one for flame maintenance and one for pizza assembly and cooking. An infrared thermometer is also a must, because of all the heat variability.

I have to be honest, the first few pizzas were not as good as I had hoped. I found they were slightly burnt on the bottom and not cooked correctly on the top. This was disappointing for the children. The general consensus was that they weren't as good at Franco Manca.

The chimney can be removed and used to circulate the air in the oven. You will also find the pellet hopper on the backside of the chimney. It is nearly twice the size of Ooni 3’s hopper, but it is taller.

You have to feel it all, and there is a steep learning curve. My theory? A lot of that is down to the small fireplace mentioned in the preceding section.

Windy conditions increase the time it takes for pellets to heat and expose their greatest flaw: flame management. The Fyra 12 is capable to reaching perfect pizza-making temperatures but it doesn't always stay there. Even in ideal conditions, the time required to make a Neapolitan style pizza takes only a few moments. In addition, the oven can take a while to recover between pies.

The real question is, however, whether the Fyra 12 can make a good pizza. As long as you are willing to navigate around its quirks, it's a simple yes.

First, remove the chimney cap. Next, take off the chimney cap and fill it with hardwood pellets. To get started, I used approximately two dozen hardwood pellets following the instructions. Next, add a firelighter (I used Ooni firelighters which were provided), and light it. Finally, push the grate into place in the back of your pizza oven.

The Ooni Fyra 12's only drawbacks are those that I couldn't have foreseen and ended up liking. Cleaning the oven is difficult. After it cools completely and you have removed the ashes, you can clean the oven using a dry cloth. To get the baking stone clean, I used a fishing spatula and some elbow grease. But by flipping it (as suggested), the high heat helped to burn any stray bits.

Does it deliver high-quality pizza? Is it easy-to-use? Is it safe to use on the road? I had to test it for more than a year before I could make a decision.

Fyra 12 is not recommended for cooks who want to make pies for large parties. The Fyra 12 is not recommended for large groups. In fact, the oven was too hot to heat up beyond 500 degrees Fahrenheit after only three or four pies. What did you get? The result? Pizzas that took longer to bake and didn't have the right texture.

You can also cook other things using the Ooni Fyra 12, provided you have cookware that fits inside the oven slot. Ooni provides recipes on its website for things like duck breasts and banana bread, which you cook the same way you would in any wood-fired oven—rotating to give every angle equal time facing the heat source. A tiny cast-iron skillet will work here, but you’ll need to pull the skillet out and rotate the food inside the pan rather than turning the pan itself, since the handle of the skillet will stick out of the oven; Ooni sidesteps this problem by selling its own cast iron skillet that features a removable handle. I think this is fussy (the pan is also a little flimsy and small, IMO), so I will stick to pizza.

Fyra 12 has some limitations, but it is great. Ooni-branded fire starters and pellets are essential. But your pizza will thank them. You should also be vigilant about not letting the hopper get full if you are making multiple pizzas at once. It's worth it if you are willing to do so. It is as simple as a wood fired pizza maker can get. The compact design folds down to store it when not being used. I am eager to use the Fyra 12 again. In fact, I have already planned a party for my parents next month. This is a testament of how well it works. They would be great for pizza in New York City. The good news is that I can now make it at home.
