Beijing’smost famous dish (better known in theWest as

seek it out atQuanjude (shownabove right), anold-
school restaurantwithornatedecor, waitstaff deckedout
in redandgold, anda luxevibe that time-trips youback
to thedays beforeMao.
That’s all nice, but thedraw, of
course, is incredible food. Purely in
terms of duck, Quanjude is ano-lose
proposition. As traditiondictates, the
spotlighteddishhangs inawood-fueled
ovenand cooksuntil itsmarinated skin
takes ona reddishhue.
