, Joseph Patrick
(JP) Anglo, developed a
passion for food early on.
He pursued his interest by
studying the culinary arts
both in Manila and Sydney.
The Le Cordon Bleu-trained
chef subsequently worked
in Singapore and Australia
Celebrity chef JP Anglo’s new venture Sarsa brings
him closer to his goal of putting Pinoy cuisine on the
global food map
but returned to establish
restaurants in Bacolod, his
hometown, and now in
Manila. Sarsa, his new eatery,
puts Negrense flavors front
and center but allows diners
to tailor the taste to their liking
by offering a range of sauces
(or
sarsa
) specially developed
by Chef JP. “I really believe
Filipino regional cuisine,
especially Negrense food, can
become globally renowned
and something consumed
the world over,” he says. With
Sarsa, he’s slowly acquainting
— and converting — those
unfamiliar with Filipino flavors
one delicious dish at a time.
What’s a typical day for
you?
These days, I really spend most of
my time in the kitchen. But I also
go surfing as much as I can to take
off the edge. I basically try to live a
pretty active lifestyle so that I can
eat all the good stuff.
What’s the story behind
Sarsa?
I’m a true blue Pinoy, born
and bred in Bacolod, and I feel
strongly about my heritage.
At Sarsa, I wanted to present
Negrense and Filipino food in
a fresh and contemporary way
but without losing its heart. My
partners and I envisioned the
restaurant to be a showcase for
excellent local food at affordable
prices. We also wanted it to be a
place where one can take foreign
guests to sample the best of
Filipino regional cuisine.
