Latin-style Eggs with Vegetables

Ingredients
½
mediumbutternut squash (about
1pound)
3
tablespoons oliveoil
1
yellowonion, chopped
2
carrots, peeledand cut into
½-inchdisks
1
cup canned tomatoes, diced
½
cup frozengreenpeas
6
greenonions, thinly slicedondiagonal
4
eggs
Salt andblackpepper
Red chile, deseededand sliced into
thin rings (optional garnish)
Directions
1.
Pre-heat oven to400F
2.
Scoopout the squash seeds anddiscard.
If youhave awhole squash, cut inhalf
lengthwise. Refrigerate the unused
half anduse it in adifferent recipe.

Place the squash in abakingdish, flesh
side up. Drizzle1 tablespoonof olive
oil on the squash and seasonwith salt.
Bake for about 90minutes or until
softened. Remove from the oven and
set aside. Once slightly cooled, scoop
out the flesh into abowl.
4.
In a largepanovermediumheat, heat
the remaining2 tablespoonsof oliveoil.
Add the onions and carrots and cook
until softened. Add the tomatoes and
stir oftenuntil themixturebegins to
thicken. Stir in the cooked squash, peas
and greenonion. Seasonwith salt and
pepper. Lower heat and simmer gently.
5.
Crack the eggs open and individually
place over the simmeringvegetable
mixture. Cook for about twominutes
or until the eggwhites are set.
6.
Portion the eggswithvegetable
mixture into four bowls and serve
immediately. If desired, garnishwith
red chile rings.
