From Brussels to Burundi Christmas is a time of year for
nostalgic feasting,
around the globe people turn to seasonal dishes
and age-old recipes to preserve Christmas traditions year after year.
In northern Europe Christmas heralds open fires and heart-warming
food, in Africa festivities revolve around family, dancing and roasted goat.
Then there’s America, where Christmas is big, bold and trimmed with gold
and tables are laden with glazed hams and pies. In the northern hemisphere
the history of feasting at this time of year dates back even further than the
celebration of Christmas, when family and friends would come together to
break up lean, dark winters with comfort foods and spiced wines. Whilst in
other cultures religious symbolism takes centre stage and is baked into
pastries, cakes and breads. Christmas is a time to reflect, gather and
celebrate and, whatever the destination, eating with gusto is likely to
be at the heart of the party.

traditions.
Aux quatre coins du globe, familles et
amis se retrouvent pour festoyer autour de repas
classiques et de recettes ancestrales, qui, année après
année, continuent à perpétuer les coutumes d’antan.
En Europe du Nord, on retrouve immanquablement
le feu de bois et les plats qui réchauffent le cœur
;
en Afrique, les festivités tournent autour de la
famille, de la danse et de la chèvre grillée. Et pour
finir, il y a l’Amérique, où Noël est cette grande
fête féerique pleine d’ornements, et de tables
copieusement pourvues de viandes fumées et de
tourtes. Dans l’hémisphère Nord, on « ripaillait »
déjà à cette époque de l’année bien avant
l’instauration de la célébration de Noël proprement
dite. Les familles et les amis se réunissaient alors
pour briser les rigueurs des longs hivers, autour
de repas réconfortants et de vin chaud épicé.
Dans d’autres cultures, le symbolisme religieux
imprègne tout, jusqu’aux pâtisseries, pains et
gâteaux. Somme toute, Noël est un moment
propice à la réflexion, aux retrouvailles et à la
fête, et quelle que soit la destination, bien
manger fait partie intégrante des réjouissances.
Van Brussel tot Burundi staat de kerstperiode voor nostalgische
feesten;
overal ter wereld wordt teruggegrepen naar seizoensgerechten en
aloude recepten die de jaar na jaar de kersttradities in ere houden. In
Noord-Europa staat Kerst voor open haardvuren en heerlijke gerechten,
in Afrika concentreren de festiviteiten zich rond de familie, dans en
gegrilde geit. In de Verenigde Staten staat Kerst dan weer voor een groots,
prachtig feest met veel glitter en tafels volgestouwd met verduurzaamde
vleeswaren en
pies
.
In het Noordelijk halfrond gaat de feestvreugde tijdens
deze tijd van het jaar zelfs verder terug dan de viering van Kerst, toen
gezinnen en vrienden samenkwamen om de barre, donkere winter te vieren
met lekker eten en kruidenwijnen. In andere culturen wordt de religieuze
symboliek dan weer verwerkt in gebakjes, taartjes en broden. Kerst is een
periode om na te denken, samen te komen, te vieren en – op welke
bestemming ook – vormt lekker eten de belangrijkste feestactiviteit.
