Drinking
This is the stuff of great mornings. The
traditional kapeng barako recipe calls
for two full scoops of ground coffee
with a kitchen spoon on a liter of boiling
water. No filters are used, sugar is
optional and milk is unheard of: you
just wait for the particles to settle before
drinking away. Café-style barako, on
the other hand, is filtered and drunk
with muscovado sugar and a packet
of creamer. This is best enjoyed with
native Pinoy
kakanin
