Chef’s Corner
Hearty Beef Chili
Yields 8 servings
Ingredients
4 pounds ground beef or small
diced beef chuck
3 ounces vegetable oil
1 large white onion, medium dice
3 cloves garlic, chopped
2 green bell peppers, stem and seeds
removed, medium dice
4 ounces tomato paste
3 tablespoons chile powder
1
tablespoon ground cumin
1
teaspoons ground cinnamon
4 ounces brown sugar
2 ounces hot sauce
6 plum tomatoes, medium dice
¼ cup cilantro, chopped
12 ounces stout beer
Salt and pepper to taste

Chef’s Tip
If it’s available, ground buffalo meat
would be excellent in this recipe. The chef
recommends diced avocado, colby-jack
cheese and sour cream, as accompaniments.
Directions
1.
Heat half of the oil in a large pot over
medium high heat
2.
Add the meat and cook until brown
3.
Drain the liquid and transfer the
browned meat to a large bowl
4.
Heat the remaining oil over
medium heat
5.
Add the onion and garlic and cook for
5 minutes
6.
Add the green pepper and cook for
5 minutes
7.
Add the tomato paste, chili powder,
cumin, cinnamon, brown sugar and
hot sauce, and cook for 5 minutes
while constantly stirring
8.
Stir in the fresh tomatoes and cilantro,
then add the beer to deglaze the pan
9.
Return the meat to the pot and stir
until all ingredients are well combined
10.
Reduce the heat to low and simmer
covered for 60-90 minutes,
stirring occasionally
