He’s been in the area for 19 years, so
it’s no surprise that there’s a strong
regional influence to his dish. “All the
ingredients I’ve used here carry the
South Tyrol seal of quality.
I use local produce wherever possible
the clean air and altitude obviously
have an effect – and results are
excellent,” says the Michelin-starred
chef at La Stüa de Michil in Corvara,
Alta Badia (hotel-laperla.it). “Whether
produced here or elsewhere, my
ingredients are always traceable and
either organic or eco-sustainable.”
The dish he’s created for the
I Tablà mountain hut (ladinia.it/itabla)
consists of chunky nuggets of pig’s
cheek browned in honey, and served
on a light and fluffy bed of potato
mousse spiced with horseradish. “The
nuggets can be eaten with the hands,
so it’s a quick and easy dish both
for the resident chef and for skiers
looking for a satisfying snack before
hitting the slopes again,” he says.
Santa Maddalena is the wine selected
to accompany the dish, a light but
decisive red that complements the
flavours to perfection.
The chef will return several times
during the season to see how this and
the other three dishes of his on the
menu are performing. Despite being
from the Marche region, he sees
Alta Badia as his second home. “It’s a
magical place – astoundingly beautiful
and with an exceptional quality of life.”
