MULLEDWINE
1 orange, halved, 60g sugar, 1 cinnamon stick
1/4tsp grated nutmeg, 3 cloves, 1 star anise, 1 bay leaf
1 bottle red wine
Add the both the peel and juice of the orange to a
saucepan, along with the sugar and spices. Add
a third of the red wine and reduce to a thick syrup
on a high heat. Reduce the temperature and add
the rest of the wine. Heat and serve.

1 orange studded with cloves, 50g raisins, 3 shots of
aquavit, 1 bottle red wine, 80g sugar, 1 cinnamon stick,
zest of half a lemon, 50g whole almonds
Place the studded orange in a bowl with the raisins
and aquavit, and leave to marinate overnight.
In a saucepan, add one third of the wine along with
the sugar, spices and studded orange. Reduce to a
syrup. Add the rest of the wine, along with the
aquavit and remaining ingredients. Heat and serve.
