Manuel Domínguez must like a
challenge. As chef and owner of
Madrid’s newest dining hotspot, Lúa,
he has taken the decision to change the
menu every week. Diners can choose
from either a set three- or five-course
selection, and the full tasting menu
includes a welcome appetiser of lentil
and boletus foam.
It’s already a big hit with food-savvy
locals, who flock to the modern dining
room as much for the views afforded
over the city through floor-to-ceiling
windows as the delicious fare.
Back in the kitchen, Domínguez is
guided by what produce is in season
and these ingredients are meticulously
reworked into Iberian-French haute
cuisine. The inspiration for his well-
thought-out dishes comes from his
mother and grandmother’s recipes from
the Galician town of Ourense. Main

Expect a menu that’s miles above the
usual rail-refreshment trolley fare when
you board this real-life moveable feast.
In a converted tram that sets off
from Place Poelaert, this unique
experience sees diners tucking into
Michelin-starred Belgian cuisine as they
take a two-hour tour of the city.
It’s all part of the tourist board’s
Brusselicious year, which has seen a
series of culinary events taking place in
the Belgian capital over recent months.
The three-course seasonal menu,
along with the chef, changes every
couple of weeks, so guests are
guaranteed a unique meal.
On our visit, Korean-Belgian
Michelin-starred chef Sang-Hoon
Degeimbre, of L’air du Temps, served up
a cracking selection of country classics
courses include a delicate, candied roast
piglet served with stewed peaches.
The food’s presentation is what you
would expect from a Michelin-starred
chef who draws in his spare time – the
chocolate ice-cream dessert decorated
with berries and a sugar sculpture is
akin to some magnificent coral from the
with a contemporary twist. The kiwi
and oyster amuse-bouche, a child of
molecular gastronomy, was an unlikely
but winning combination, while the
mussels and chips were a real joy.
For most of May, Thierry Theys,
not yet 30 and already at the helm
of two-Michelin-starred restaurant
Naunce will be in charge of surprising
your palate. Be sure to make a
reservation because the 34 covers in the
tram are proving very popular.
