For most people, a total of 2-3 months, moving from the most strict to a more relaxed stage of the diet, is usually sufficient to clear up the symptoms and return them to their normally healthy state. This is just a comment for those of you struggling with candida for longer than 6 months, I would recommend looking into whether you are dealing with higher than normal levels of heavy metals, in particular mercury.
You’re mentioned that you followed Stage One of the diet without any deviation from the list of recommended foods. I have been trying to start an anti-candida diet for three months, and am having a difficult time eliminating caffeine. The first time I was diagnosed with candida back in 1999, the diet hadn’t yet evolved to the point that it forbade all grains. When I first started the anti-candida diet, I restricted grain consumption significantly for the first few months to allow my body to heal. Even after six years on one version or another of the diet, I sometimes feel that my body could use a break from grains, especially after a period in which I’ve eaten too many refined-grain products (such as when I was testing for my last cookbook, Naturally Sweet and Gluten-Free). Health food stores and many conventional supermarkets carry nut-based flours these days, so it’s easy to use them in baked goods or other recipes. Since I was determined that vegans could follow a plant-based anti-candida diet and succeed, I made sure that the complete diet protocol in Living Candida-Free was offered in a vegan variation (as well as the omnivorous options that were designed by Andrea).
Most will suggest that you cannot follow a vegetarian diet and effectively fight off candida yeast; they recommend animal sources of protein along with a careful recommendation to delve into the sources of your protein so that the animals were humanely raised and slaughtered.
When you’re on a vegan diet, sources of complete protein are limited, and tofu fits that bill. Again, I decided to try miso after the first stage of the diet and I’ve never had any problems with it. I have Candida, and am probably similar to you in it’s atypical and quite aggressive nature. I was diagnosed with candida last week and have been drinking the apple cider vinegar and watching my sugar and wheat intake. The ACD is a difficult diet to follow, especially at the beginning–but it really does get easier, I promise.
Instead, I’d like to address both the pros and cons of eating grains, whether grain-free is a viable option for vegans, and whether grain-free can fit comfortably into a vegan anti-candida diet.
People with candida need to keep their blood sugar levels even to prevent spikes that could feed the candida. Chickpea (garbanzo) flour may be my all-time favorite legume-based flour, perfect in a huge variety of recipes to replace grain-based flours entirely. In fact, many Paleo diets allow all kinds of vegetable starches or flours. I use many of these as thickeners in sauces, but I also rely on the root vegetables themselves to replace some grain-based foods (such as thinly sliced sweet potato instead of crackers). I definitely relate to finding comfort in grain based foods and did find it tough giving most of them up for the few months I followed an anti-candida diet. Yes, it can be tough for people when we’re so used to so many grain-based foods in our diet, I think. After about 2 years of following the Paleo diet, I am just now able to tolerate a small amount of grain.
According to some other anti-candida diets, however, fermented products can trigger yeast reactions because of their chemical similarity to yeasts. On the other hand, the Body Ecology diet recommends eating lots of fermented foods.
Any fermentation involves sugars, and fermented foods in general tend to trigger candida symptoms. You’ll get recipes as soon as they’re posted, plus cookbook updates and news about upcoming events!
But I was recently diagnosed with Candida by an alternative practitioner with muscle testing or applied kinesiology! I’m a little concerned, though, that this diet is a bit too much like the Atkins diet, even though WA does recommend that individuals use their diet rules as they see fit. The general consensus these days is that if you eat a well-balanced and varied diet throughout the week, your body can combine the amino acids into complete proteins for you without any problem. Yet that’s exactly what those of us who have to live within the boundaries of the Candida diet have to come up with. Consult your doctor or health professional before starting a treatment or making any changes to your diet.
In our upcoming book, Living Candida-Free, Andrea Nakayama has devised an extensive questionnaire that can help you assess whether you have a candida overgrowth, and how serious it is. Cerevisiae is naturally present on most foods and even in the air (just as candida albicans, the most common source of CRC, is always present in and on our bodies). Apparently, the process can also generate molds, and even though they are not candida molds per se, they can trigger the same reaction.
Similarly, other popular diets that limit or remove grains (and often legumes as well) include GAPS, AIP, SCD and others.
You certainly don’t make it look like a hardship with all those delicious recipes you listed, and I learnt a lot about cooking grain-free while testing for your upcoming book.
It’s funny really because years ago when we first became vegetarian I bought a book called Diet for a Small Planet (it still lives on my bookshelf). You should work with your holistic healthcare professional or doctor (if you’re lucky enough to have a doctor who believes in candida) to see what is best for you.
So to keep your digestive and immune systems from sending out alarms, it’s best to avoid the black tea.
These days, it’s easy to find recipes that reproduce standards like pizza or pasta completely grain-free, too.
Gluten is bad for us for other reasons as well, but these grains are majorly responsible for the majority of acrylamide in our diets. But we feel much better when we follow the Paleo diet and I think it has tremendously helped me and my son!
I am sad if I will have to give up my favorites sweets and breads forever…The candida makes sense though.
