In my initial French Toast recipe, which is as basic as it gets, I think I shot off about not liking French Toast Casseroles or other “gussified” French Toast creations. In my “research” I decided to stay loyal to one of my favorite components of my French Toast which is Texas Toast bread.
After this, I layer the bread and put sugar and cinnamon between the layers as though I were making cinnamon rolls. It’s too bad that I found a recipe for a breakfast casserole already for That Special Day. You will also want to allow time for it to fall and settle a little before serving it…at least 15 minutes. Mind has hash browns on the bottom, sausage, bacon, red and green bell pepper (for that Christmas touch) all drowned in the wonderful custard and topped with cheese. We found that French and Italian loaves, with their dense texture and thin, chewy crust, worked best.

I am mostly posting this because I don’t want to misplace the recipe, and partly posting it because OMG it was so, so good that I think you should make it, immediately. This recipe is designed to employ the entire loaf.  Hide the end pieces in the bottom layers for appearance sake. One thing I am looking for when preparing dishes for Christmas breakfast is the aroma it will bring our kitchen and the whole house on that very special day. I used salted butter to balance the sweetness (and satisfy my salty-sweet obsession) and served it with crispy bacon.
So, you just layer the sauteed fruit under the bread, layer in the bread and then add the custard?
We also found during our tests that the French toast casserole recipe was best when we “staled” the bread in a moderately hot oven, allowing it to toast slightly before assembling the dish. Be sure to use supermarket-style loaf bread with a thin crust and fluffy crumb; artisan loaves with a thick crust and chewy crumb don’t work well here. I set about creating this one, and I have to say it is going to go into heavy rotation with my green chile and sausage breakfast casserole.  This was well received and got good reviews from the wee ones, teenage boys, and adults, alike.

For the custard, we settled on eight whole eggs and a little less than twice as much whole milk as heavy cream, which gave us a rich and custardy but not cloying result. The casserole needs to sit in the refrigerator, well covered, for at least 8 hours in order to achieve the desired consistency, and it can be made up to 24 hours in advance.
It was so good we could not speak.  It was so rich, and so delicious, and I might put this casserole on my laminated list.
Riverbend is the name of the beautiful ranch owned by the Whitlows, our hosts, and thus this sweet breakfast staple will forever bear that name. To that I will simply reply that I look forward to eating Challah bread French Toast Casserole the next time I am at your house.
