Los que me seguis en Instagram y en Facebook habeis podido ver estos dias que he ido publicando fotos de mis primeros pinitos con el regalo que los Reyes Magos me trajeron este ano. Se trata de una olla de coccion lenta, conocida popularmente por el nombre de la marca mas habitual: Crock Pot, aunque hay muchos modelos y fabricantes diferentes. Aunque el funcionamiento es el mismo, en el mercado existen muchos tipos de ollas de coccion lenta. Todas estas ollas tienen tan solo tres posiciones: 1 (low), 2 (high) y la opcion de "mantener caliente" (warm). Otra duda que tuve al elegirla era sobre si escoger una con tapa de cristal o con tapa opaca, por eso de ver el interior mientras se esta cocinando. Existen hasta modelos con wifi que se pueden encender, apagar, modificar la temperatura o consultar el tiempo restante de coccion tranquilamente desde cualquier lugar a traves de una sencilla aplicacion instalada en el telefono movil. En este tipo de ollas podemos preparar nuestras recetas de siempre, aunque hay que tener en cuenta algunas cosas. Un dato importante a tener en cuenta cuando cocinemos legumbres en la slow cooker es que estas contienen una toxina (Fitohemaglutinina) que solo se elimina con una coccion durante varios minutos a altas temperaturas.
Como la preparacion de cualquier plato en slow cooker nos va a llevar mas horas de las habituales hasta ahora, es importante tener una buena planificacion. Como ya os decia arriba, el cocinar a baja temperatura durante largos tiempos hace que obtengamos unos guisos con un sabor mas concentrado, unas carnes de textura sedosa y unas legumbres que son pura mantequilla. Pero ademas, en contra de lo que en principio pueda parecer (y de lo que opinaba mi madre cuando le conte que iba a tener 8 horas unas alubias), una de las ventajas de este tipo de ollas es su bajo consumo electrico. Y ahora que ya os he contado mas o menos brevemente en que consisten este tipo de ollas, espero poder ir subiendo alguna receta preparada con mi nuevo juguete, a ver que os parece. The rule of thumb for slow cookers is 1 hour on HIGH = 2 hours on low, so if you wanted to make these twice as fast, you would cook them for 4-5 hours on HIGH.

Muchos me han preguntado que era ese aparato y para que servia, asi que me he decidido a escribir un post acerca de en que consiste y cuales son sus ventajas. Consisten unicamente en un recipiente ceramico que se introduce en un soporte metalico conectado a la corriente electrica con un termostato que proporciona un calor constante y a una temperatura continuada, que no suele superar los 90-100?, por lo que logicamente los tiempos de cocinado se alargan considerablemente, llegando a alcanzar las 12, 15 o incluso 20 horas de coccion, dependiendo de los ingredientes y de la receta en cuestion. Pero dado que tengo varias ollas normales con tapa de cristal y este siempre termina empanado por el vapor producido por la coccion, finalmente opte por una de tapa opaca porque en general era la que mas se ajustaba a lo que yo queria, independientemente de si podia o no entrever el guiso a traves de la tapa. Por ejemplo, al no superarse la temperatura de ebullicion del agua, apenas hay evaporacion, por lo que la cantidad de liquido de las recetas debera ser menor que en otras formas mas rapidas de cocinar.
Por tanto, si vamos a preparar legumbres, como estas ollas no superan el punto de ebullicion, sera necesario primero darlas un hervor durante varios minutos al fuego normal y luego pasarlas a la CrockPot para completar la coccion durante el tiempo necesario. Deberemos calcular el tiempo de preparado y de cocinado, incluso de reposado de algunas recetas.
Ademas las vitaminas y ciertos tipos de nutrientes se conservan mejor a bajas temperaturas.
En la temperatura baja (low) el coste generado no llega a los 0,70€ tras 24 horas continuadas de funcionamiento. So, tumeric and cayenne and chile flakes to the rescue!  After another couple of hours of cooking, it actually turned out fairly well: the flavor was good and the sauce that I feared would never reduce actually reduced a little bit too much (I added a touch more lime juice at the end). Also, chicken probably doesn’t need so long (3-4 hours over high heat seems insane to me) to cook, even in a crockpot. I had completely submerged chicken breasts in one of my first experiments, and they were dry and disgusting after being cooked too long.
Will need to try this recipe, I think it could potentially be a hit in our house especially with my three girls. I really need to get a new crock pot… mine seems to only cook on one temp… really, really hot!

Place sauce in small saucepan and boil for 3-8 -ish minutes, until sauce thickens (from evaporation).  Serve ribs in wide bowl and pass sauce in a gravy boat for diners to serve themselves.
Since all slow cookers cook at different temperatures and different efficiencies, it pays to “stick a fork in it” an hour or two ahead of time and see if it is done! So I substituted 3 pounds of browned ground beef for the chicken and cooked it for four hours on high.

O, curiosamente, el tiempo de cocinado de las verduras y vegetales en general es mas largo que el de la carne, por lo que tendremos que tenerlo en cuenta tambien para estofados de carne con verduras.
Pero una vez interiorizada esta premisa, lo demas es exactamente igual que la cocina habitual para nosotros hasta ahora.
Some of the chicken pieces were moist, juicy and falling apart tender, while some seemed very dry and overcooked: not sure if that means I cooked it too long, or not enough?  Any Crock-Pot wisdom out there for a neophyte? You could always use a cut of meat that retains moisture better (chicken breasts are notorious in their ability to become dry) or just one that takes longer to cook. I actually almost never cook chicken in the crockpot because picking out the bones frustrates me, but boneless skinless doesn’t seem to work.
I also use it to keep mashed potatoes warm at the holidays (GENIUS trick – you can even make them two hours ahead of dinner and put them on WARM). 30 minutes before serving, rip up raw biscuit dough and place them on top of the soupy mixture. Dinner was never so easy, or so delicious! Serve with mashed potatoes and cole slaw or broccoli or a salad. Then once it was done cooking I stirred in about a cup of chopped cilantro and it was a hit! The first time I made it, I told my parents to stop over and get some (thinking it was too much for the 2 of us) but before they could get there, my husband had eaten most of it.
