Mathematics Stack Exchange is a question and answer site for people studying math at any level and professionals in related fields. My textbook uses the terms interchangably, and they look the same in graphs, so I was wondering if there a difference between the two? All circular paraboloids are elliptical paraboloids but not all elliptical paraboloids are circular paraboloids. More precisely, an elliptical paraboloid in a surface which has parabolic cross sections in 2 orthogonal directions and 1 elliptical cross section in the other orthogonal direction.
Because a circle is just a special type of ellipse (using one common definition of ellipse), a circular paraboloid (defined the same as elliptical paraboloid but with the last cross section being circular) is just a special type of elliptical paraboloid. Your question seems to suggest that these two images do not display the same curvature of the grid on the plane.
The amount of curvature changes as your camera angle changes (less curvature close up as the camera gets further off the ground).
Basically for speed there was a naive method of picking which pixel from a texture to draw at a given pixel on screen given the camera you're rendering from, and the curvature you see is a side effect of the grid pattern.

Mipmapping helps fix this issue as well as improves speed of rendering (as picking adjacent pixels from a lower res texture is faster due to cache coherency than picking far apart pixels on a larger texture). Something that this answer misses is that the top image in the question is not using simple point sampling. The solid cut from an infinite circular cylinder by two planes is a cylindrical segment or a truncated cylinder. The main interest of this page is to see how a truncated cylinder can be developed into a plane. An ellipse is commonly defined as the locus of points P such that the sum of the distances from P to two fixed points F1, F2 (called foci) are constant.
But by the rotational symmetry of our figure, the distance P1P2 is independent of the point B on the curve. Plane nets of prisms with a regular base with different side number cut by an oblique plane. Every ellipse has two foci and if we add the distance between a point on the ellipse and these two foci we get a constant. The first drawing of a plane net of a regular dodecahedron was published by Durer in his book 'Underweysung der Messung' ('Four Books of Measurement'), published in 1525 . The first drawing of a plane net of a regular octahedron was published by Durer in his book 'Underweysung der Messung' ('Four Books of Measurement'), published in 1525 .

The first drawing of a plane net of a regular tetrahedron was published by Durer in his book 'Underweysung der Messung' ('Four Books of Measurement'), published in 1525 .
Leonardo da Vinci: Drawing of a truncated octahedron made to Luca Pacioli's De divina proportione. Leonardo da Vinci made several drawings of polyhedra for Luca Pacioli's book 'De divina proportione'. You can chamfer a cube and then you get a polyhedron similar (but not equal) to a truncated octahedron. When the perspective it in that angle and with their very limited processing power my guess it they wrote something that would be good enough. Look at the diagonals off in the distance, they exhibit the same behavior as your question's images. However there is some sort of different sampling technique used in the first image, you're right. The reason that the curve is further in the distance is mainly because the camera's angle with the plane is larger than the angle in the images in your question. The aliasing of edges close up is clearly different (not necessarily better) than in the second image.
