Directions
- Wash and dry produce. Dice red onion, red bell pepper and jalapeno. Add to a medium sized bowl.
- Mince garlic clove and add to bowl. Season with salt and pepper.
- Whisk 4 eggs into a small bowl. Once whisked thoroughly, add to medium bowl with produce.
- Heat a skillet on medium heat. Add 1 tablespoon of olive oil to skillet.
- Add egg and vegetable mixture to skillet, stirring often to cook.
- Serve with cilantro garnish, salsa or avocado if you’d like! Enjoy!
