Pumpkin Pie Parfaits


Ingredients

  • 10 oz pumpkin yogurt (or mix together equal parts yougurt and pumpkin puree)
  • 1 cup of 100% pumpkin pie puree
  • 1 tbs of honey
  • 1 cup of Cool Whip
  • 2 Graham crackers
  • Garnish: sprinkle of cinnamon
  • Directions

    1. In small bowl, whisk together the pumpkin, yogurt and honey. In food processor, pulse the graham crackers until well blended into a crumb.
    2. In a glass of choice, layer the pumpkin mixture first, followed by the crumb, and then cool whip. Layer until glass is full or desired amount is added. Serve with a sprinkle of cinnamon or pumpkin pie spice on top. Enjoy!
    **use low-fat yogurt to reduce fat of dessert. Could use crumbled granola instead of the graham crackers. If using graham crackers opt for low-fat versions. Use Siggi’s pumpkin yogurt for a low-sugar option.
