Directions
- If using wooden or bamboo skewers, soak for at least 30 minutes to prevent burning in broiler or grill. (I didn’t use skewers so if not using, skip this step)
- Mix marinade by mincing the garlic cloves and onion into a bowl or large Ziplock bag. Add 2 tbsp soy sauce, 2 tbsp olive oil, 1 tbsp honey and stir or mix to combine.
- Prepare black beans by adding 1 tablespoon of olive oil to a pot and 2 cloves minced garlic, add 1 minced jalapeno.
Saute for 1 minute then add ½ teaspoon cumin. Saute for another minute. Add black beans, stir and heat through.
- Chop pork into 1 inch cubes. Place cubed pork into bowl or Ziplock bag with marinade. Refrigerate for 30 minutes.
- Dice the onion and bell pepper into 1 inch pieces. Place into a bowl. Drain juice from pineapple and mix the pineapple chunks into bowl. Season with salt and pepper and mix.
- If using skewers: thread the skewers alternating with pieces of onion, pepper, pineapple and pork. Set skewers on a sheet pan if using the broiler option on an oven.
- If using broiler: adjust oven rack so that the skewers will be about 5 inches from the top of the oven/broiler. Then preheat the broiler on high for 5 minutes. Add sheet pan with skewers and cook for 5 minutes or until the edges begin to brown. Rotate and return for 5 minutes, repeat until skewers are evenly browned on all sides.
- If using a grill: preheat grill to medium heat. Place skewers on grill and rotate/flip to ensure skewers are evenly cooked.
- If not using skewers: add pork and marinade mixture to skillet on medium heat. (No need to add cooking oil at this point because there is oil in the marinade mixture). Cook for 4-5 minutes on each side or until pork is cooked all the way through.
- Add vegetables into skillet with pork, stirring frequently to coat. Cook like this for 3-4 minutes. Then cover the skillet with lid to steam vegetables.
- Chop cilantro finely and add to a small bowl for garnishing.
- Serve with brown rice, cauliflower rice, couscous, etc. Garnish the kebabs or stir fry with chopped cilantro and sriracha (or other hot sauce). Enjoy!
