Low-Fat Mashed Potatoes


Ingredients

Prep Time: 10-15 minutes!
20 minutes cook time
  • 2 lbs (6-7 medium) yukon gold potatoes, peeled and cubed (leave peel on some if you want ‘chunky’ mashed potatoes)
  • ¾ cup and 2 tablespoon low fat buttermilk
  • 1 cup celery, chopped
  • ¼ cup chives or green onions, chopped
  • 6 cups cauliflower, cut into bite-sized florets
  • 2 tablespoons parsley, chopped (optional)
  • 1 tbsp light butter
  • Salt and pepper, to taste

Directions

  1. Place potatoes in a large pot with salt and water to cover the potatoes. Bring to a boil.
  2. Reduce heat and cover. Simmer for 20 minutes until potatoes are tender.
  3. Drain and return potatoes to pot or a large mixing bowl.
  4. Add buttermilk, light butter, and remaining ingredients. Mash with fork, whisk or hand blender until smooth to preferred consistency. Season with salt and pepper to taste. Enjoy!
