Directions
- Place potatoes in a large pot with salt and water to cover the potatoes. Bring to a boil.
- Reduce heat and cover. Simmer for 20 minutes until potatoes are tender.
- Drain and return potatoes to pot or a large mixing bowl.
- Add buttermilk, light butter, and remaining ingredients. Mash with fork, whisk or hand blender until smooth to preferred consistency. Season with salt and pepper to taste. Enjoy!
