Low-Carb Cauliflower Stuffing

Directions

  1. Heat olive oil in skillet on medium-high heat. Add in onion, celery, and garlic, stirring frequently, until golden brown. About 8 minutes.
  2. Reduce heat to medium and stir in the cauliflower florets. Cook until brown, stirring frequently, about 10 minutes.
  3. Add in parsley (if using), poultry seasoning, sage, salt and pepper. Cook for 1 minute for spices to combine.
  4. Stir in broth, cover and cook until cauliflower is tender and liquid is absorbed, about 10 minutes. Enjoy!
