Kale Salad


Ingredients

Prep Time: 10-15 minutes
1 - 2 servings for entree, 2 - 4 servings as side dish

Directions

  1. Chop or manually rip kale into small bite-sized pieces. Add to large salad bowl.
  2. Add 1 tablespoon olive oil and 1-2 tablespoons lemon juice to large salad bowl.
  3. Add salt and pepper to taste.
  4. Mix kale in with above dressing, massaging the dressing into the kale leaves (this helps to reduce the potential bitterness of the kale).
  5. Serve as a side or as an entree with protein such as chicken, feel free to add other toppings like sunflower seeds or nuts, lean protein (such as chicken) or shaved cheese (such as parmesan) or vegetables (carrots, grape tomatoes, etc.) to spice the salad up in your own way!
