Individual Pumpkin Pies (Low-Carb)


Ingredients

Prep Time: 5 minutes
45-50 minutes cook time
  • 15 ounces of pumpkin puree
  • 1/2 cup of heavy cream or use coconut cream
  • 4 eggs beaten
  • 1/2 teaspoon of vanilla extract
  • 2 teaspoon of pumpkin pie spice
  • 1 teaspoon of stevia
  • optional toppings: whipped cream, sprinkle of nutmeg, cinnamon, or other spice

Directions

  1. Preheat oven to 350 degrees.
  2. Spray ramekins or a muffin tin with cooking spray
  3. In large bowl, mix together pumpkin, cream, eggs, spices and stevia.
  4. Pour evenly into ramekins or muffin tin
  5. Bake for 45-50 minutes or until a knife in center comes our clean.
  6. Best served cold. Top with toppings (if applicabel). Enjoy!
