Eggs (hard-boiled, scrambled, over easy or poached. However you like them)
Roasted vegetables (a mixture of your favorite or use this as a clean out the fridge/freezer meal or use a packaged mix)
Top with salsa, hot sauce, dressing, etc.(if you’d like!)
Directions
Preheat oven to 400 degrees or use the high-broil setting.
Prep roasted vegetables: add chopped vegetables into a large bowl with 1-2 tablespoons olive oil and seasoning (salt, pepper, garlic powder for example). Mix up the vegetables well.
Coat a baking sheet (or 2 if doing more meal prep) with cooking spray or foil.
Spread the vegetables onto the baking sheet evenly and cook for 15-20 minutes at 400 degrees. (If using high broil, check the vegetables at about 8 minutes, this setting might decrease the number of minutes the vegetables are in the oven.)
