Healthy Chicken Waldorf Salad


Ingredients

Directions

  1. Dice or chop chicken and season with salt and pepper.
  2. Heat a skillet on medium heat. Add 1 tablespoon of olive oil to skillet. Cook chicken until done, 4-6 minutes per side.
  3. In large bowl, whisk ⅓ cup lowfat Greek yogurt, lemon juice, 1 teaspoon honey, ½ teaspoon Dijon mustard, ¼ teaspoon salt, and ¼ teaspoon of black pepper together.
  4. Heat another skillet over medium heat.
  5. Wash and dry produce. Chop, dice or halve grapes, apples, and chives. Add all to the salad bowl with the dressing.
  6. Wash and dry lettuce. Separate leaves to use for lettuce wrap.
  7. Add chicken to large salad bowl. Toss salad to combine ingredients. Enjoy!
