Directions
- Dice or chop chicken and season with salt and pepper.
- Heat a skillet on medium heat. Add 1 tablespoon of olive oil to skillet. Cook chicken until done, 4-6 minutes per side.
- In large bowl, whisk ⅓ cup lowfat Greek yogurt, lemon juice, 1 teaspoon honey, ½ teaspoon Dijon mustard, ¼ teaspoon salt, and ¼ teaspoon of black pepper together.
- Heat another skillet over medium heat.
- Wash and dry produce. Chop, dice or halve grapes, apples, and chives. Add all to the salad bowl with the dressing.
- Wash and dry lettuce. Separate leaves to use for lettuce wrap.
- Add chicken to large salad bowl. Toss salad to combine ingredients. Enjoy!
