Brussels Sprouts and Bacon Salad


Ingredients

Prep Time: 30 minutes!
5 minutes cook time
  • 4 strips of bacon, uncured and sugar free, cooked and chopped
  • ¼ cup reduced sugar cranberries
  • ½ red onion, chopped
  • 1 pound Brussels sprouts (6-10), trimmed and shredded

Citrus Dressing

  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • 1 mandarin orange, zested and juiced (feel free to eat afterwards!)
  • Salt and Pepper, to taste
  • 1 tablespoon thyme
  • t shallot, minced
  • 1 teaspoon dijon mustard

Directions

  1. Wash and trim Brussels sprouts. Quarter the Brussels Sprouts and shred using a food processor or knife and add the shreds to a large bowl or food storage container.
  2. Chop the red onion and add the bowl or container.
  3. To make the citrus dressing: add ½ cup olive oil to mason jar or food storage container, add in 1 tablespoon lemon juice, salt and pepper, thyme and Dijon mustard. Mince the shallot and add to the above ingredients. Zest and juice the mandarin orange and add to the above ingredients. Mix together by stirring or shaking.
  4. Add the slices of bacon to a small skillet on medium heat to cook, about 4-8 minutes. Then roughly chop the bacon and add to the shredded Brussels Sprouts.
  5. Add ¼ cup of dried cranberries to the salad and add the citrus dressing. Mix thoroughly and enjoy!
**The Citrus Dressing recipe makes 1 cup, so save the rest for later.
