Directions
- Whisk 4 eggs in medium bowl. Heat a medium skillet with 1 Tbsp of olive oil over medium heat. Add eggs once skillet
is hot. Scramble the eggs in skillet, stirring frequently. Turn off the heat and season with salt, pepper
and red pepper flakes.
- Lay tortillas on counter top and divide the eggs among the 4 tortillas. Place the eggs on the side of the centerline
of the tortilla.
- Top the eggs with ΒΌ cup of black beans, 1 tablespoon of salsa and 1 oz. of cheese per burrito. Roll the burritos
up seam side down, set aside.
- Place the burritos (seam side down) into the warm skillet (from cooking the eggs) and warm until the tortilla
is golden brown. Be sure to cook all sides. Cool burritos slightly and wrap tightly with plastic wrap or
wax paper, label and freeze.
