Directions
- Dice avocado into small bowl, mash with fork.
- Season avocado with salt and pepper.
- Heat a pan to medium heat.
- Add 1/2 tablespoon olive oil. Add cracked egg to pan and cook until preferred doneness (medium, over easy, hard, etc.) Or use a hard boiled egg!
- Spread mashed avocado over whole grain bread and add egg on top. Enjoy!
