1 cup quinoa, rinsed and cooked (or use brown rice)
2 cups low-fat vegetable or chicken broth or water to cook quinoa
Vegetables (your choice!)
Suggested additions: limes or lime juice, avocado, low-fat cheese or low-fat sour cream, cilantro, black or pinto beans, etc.
Directions
Add 1 tablespoon of olive oil to a large skillet on medium heat. Add in the ground turkey once the skillet is hot and cook thoroughly. Add seasonings if using.
Cook quinoa: heat a medium saucepan over high heat with 2 cups water or broth to a boil. Add 1 cup of quinoa in once at a boil and turn the heat to low. Cover the saucepan and let sit for about 15 minutes. Quinoa should be fluffy and liquid should be absorbed when done.
Add in chopped vegetables and top with suggested toppings above for an at home burrito or taco bowl. Enjoy!
