Acorn Squash Recipe


Ingredients

  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Garlic powder, to taste

Directions

  1. Heat oven to 400 degrees F. Cut squash in half lengthwise (start at the end without the stem for a easier cut) then scrape the seeds out of the middle.
  2. Place the halves upright on a baking sheet. Coat each half with olive oil, salt, pepper and garlic powder (use a basting brush or your hands to evenly coat the squash halves)
  3. Roast squash for about 45 minutes or until tender. Enjoy on salads, as a side dish, etc.
