Ingredients
Prep Time: 15 minutes
1 cup guacamole (or make your own)
1 ½ cup plain non-fat Greek yogurt
1 can of refried beans (low fat black beans or use 1 can of whole black beans) or use 2 cans if preferrable
2-3 medium-sized tomatoes, chopped
2 cans (3.5 oz. each) sliced black olives, drained (optional)
½ - 1 cup shredded cheddar cheese or Mexican cheese (use low fat if preferrable)
1 package of taco seasoning (or make your own, 1 oz.)
1 bunch of green onions, chopped (optional)
Directions
- In small bowl, combine yogurt and taco seasoning.
- To assemble:
- Spread refried beans in a large shallow serving platter (casserole dish 9x9 sized if using 2 cans of refried beans, use a smaller dish if only using 1 can)
- Spread avocado mixture on top of refried beans.
- Spread yogurt-taco seasoning mixture on top of avocado mixture.
- Spread yogurt-taco seasoning mixture on top of avocado mixture.
- Spread yogurt-taco seasoning mixture on top of avocado mixture.
- To make taco seasoning:
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried oregano
- 1 1/2 ground cummin
- 1 tsp salt
- 1 tsp black pepper
- Stir to mix together
- To make guacamole:
- Peel, pit, and mash 3 medium-sized avocados, into a bowl with 2 tbsp lemon juice, ½ tsp salt & ½ pepper (or put in a blender).
- *Serve with your choice of corn chips. Enjoy!
