The making is easy, but the daily maintenance to keep the Kefir production going is quite a mission. Considering that milk contains sugar in form of lactose, you could presume that Kefir is not suitable for Candida Sufferers.
Apparently the little sugar gets used up during the fermentation process though, and the end beverage is fine to drink even for a Candida sufferer. Judging from the comments about Kefir on Candida forums, it looks as if Kefir DOES cause symptoms in some people though.
I started of with a small glass of goats milk kefir mid morning and mid afternoon (after 24 hr culturing). The Kefir was quite bubbly and had a bit of a fizz to it, not hundred percent my thing, but drinkable, and I felt energized afterwards. Now initially I really didn’t think it could have been caused by the Kefir, but apparently it has!
A longer fermentation, basically letting the Kefir become more fizzy and solid, leads to a highly acidic beverage and a binding effect (=constipation). What I failed to see was that I used a small container with a big batch of kefir grains, which fermented the milk much quicker than 24 hrs… duh, making it binding and therefore promoting constipation – just great! Before this Kefir experiment, I had cut dairy pretty much out of my life (I was using rice milk and almond milk and very little goats milk). According to this theory Kefir lowers the colon ph and supports indigenous bacteria in your gut. The other camp believes that any reaction is not due to die off but simply an allergic response to the lactose, yeast or casein in the kefir.
This is something you need to gauge for yourself, based on how long you’ve been having Candida issues and how severe they are. If on the other hand your symptoms are only mild and you generally feel good, without having sinuses problems, then I’d give Kefir a go.


Kefir might give your immune system an extra kick and enable your native flora to finally dominate the territory again. If dairy doesn’t agree with you, you could try water kefir grains and make kefir from coconut milk or soya milk for instance. After my success with goats milk kefir grains I’m keen to try my luck with water grains at some point this summer. These foods include probiotic yogurt, kefir and fermented foods like sauerkraut and kimchi. The best thing is that you can keep using those same kefir grains almost indefinitely, so this is a very economical way to produce your probiotics. In addition, both sauerkraut and kimchi are high in Vitamins C and B12, which can help build up your immune system and fight off your Candida overgrowth.
Just follow a few simple steps, and every 24-48 hours you can have a fresh batch of kefir ready to go. The Body Ecology kit contains 6 packets which can each be used for around 7 batches of kefir. The kefir grains are quite acidic, meaning that kitchen implements made from aluminum, iron, brass or copper are likely to release toxic metals into your kefir or on to the grains. This is particularly important for Candida dieters, because this extra time significantly reduces the lactose content in the kefir.
The fermentation process can take anywhere from 12 hours to 48 hours, depending on how you like your kefir.
In fact, you can even make it using just water, although your kefir is likely to end up a little runny and thin. Using the right combination of these three elements is the best way to overcome a Candida overgrowth. Advocates of this theory say you should stick with the kefir regime until the good bacteria from the kefir outnumber the baddies.
And if you feel nauseous or bloated, then I’d definitely give the Kefir a miss for now, too. But first you need to bring the candida overgrowth under control with antifungals to make space for the goodies. These can be taken at the same time as probiotic supplements and are a great addition to any diet. Just find some kefir grains (you can buy packs online or get some from a friend) and place them in a jar of milk. So adding some prebiotic foods to your diet will certainly not hurt, and it may just help rebalance your gut bacteria a little quicker. Chicory root is a great example.


These brands rarely contain live bacteria and are often packed full of sugar that will feed your Candida overgrowth. So as well as being hugely beneficial to your gut flora, kefir is also a very economical health food. So if you allow it to ripen, you get all the benefits of the probiotics and none of the Candida-feeding lactose. As a rule, less time in the jar will produce a sweeter, thinner kefir, whereas a longer fermentation will result in a thicker, more sour kefir. Skimmed milk will also make good kefir, but it won’t have that same, satisfying taste as it gets from regular milk.
They are basically saying that the nutrient density in Kefir will give more health benefits than side-effects.
They do this by building up your immune system, crowding out the Candida yeast and restoring the correct acidity to your gut. If you want to beat your Candida overgrowth for good, kefir is a great way to keep your gut flora in balance for years to come. In fact the more kefir you make, the more grains you will be left with each time, so you’ll have plenty spare to give to friends and family! Additionally, ripening the kefir increases the amount of B vitamins contained in the kefir.
After some time you may also see the kefir separating into two layers – a thick, white curd at the top, with a thin, yellowy whey underneath. In fact, storing your kefir at room temperature for a day or two will help it ripen, increasing the nutritional content and allowing most of the lactose to be fermented away (this is even better for Candida dieters).
Consult your doctor or health professional before starting a treatment or making any changes to your diet. You can eat yogurt, in addition to a course of good commercial probiotics, soon after you begin the strict anti-Candida diet. When you’ve finished your first batch of kefir, you can place the grains in a little milk and leave them covered in the fridge. The kefir is OK to consume at this stage but will be quite sour, so as soon as you see any signs of separation it’s probably best to move on to step three. If you are not going to make another batch of kefir straight away, place the grains in a bowl with a small amount of milk and store them in the fridge.
