Low Carb Chocolate Chip Cookies made with Almond Flour I thought about it and even shocked myself by finding my shopping cart in the checkout stand at the grocery store with regular, non-organic, all purpose flour and (gasp) granulated sugar. On the behalf of me and my new pair of skinny jeans, I’d like to formally thank you for these healthy girlscout cookie recipies. In my post on Low Carb Cooking For One yesterday, I mentioned that it’s been a boring food week. Not having a good variety of low carb foods in the house, I got take-out a little more than usual this week. Not so bad at only 6 net carbs, and definitely better than the Boneless Wings which are 58 net carbs. This morning I’m snacking on Deluxe Mixed Nuts (2 net carbs per serving) and string cheese.
Speaking of string cheese and bleu cheese, one of my easy low carb lunches was smoked sausage fried up in the skillet – dipped in my leftover dressing (from the wings) with a string cheese on the side.
I also made up a batch of my low carb cookie recipe and a batch of of the base for my low carb bread recipes.
If I make the base recipe for the cookies I can eat them plain, add sugar free preserves (I call them PB&J cookies), or even add chocolate chips if I have a sweet craving. I doubt those few bites blew my carb count for the day *that* bad… but the real cheat came after dinner -lol. It’s definitely time for a trip to the grocery store to stock up on some more good low carb foods & snacks! I recently worked my mojo on a simple, classic, low carb chocolate cake and my low carb brownies with great results so now I’m focused on cookies.
It really made me realize how much I enjoy eating Low Carb, and even more – how much I enjoy losing weight instead of gaining or just standing still. We basically have had cookies coming out of our ears while I’m testing different techniques to de-carb in the best tasting way.
Okay, okay, that last one was a bit of a delusion because I know what chocolate chip cookies taste like :-) Anyway, I moved through the checkout line and did purchase the carbs but continued to feel guilty. Roll the dough into 1½-inch balls, flatten into cookie shapes, and place evenly apart on the prepared baking sheet.

Using a small cookie cutter or the large end of a piping tip, cut the center out of the cookie.
After much research and thought, I decided what could be more real than the ubiquitous Nestle Toll House Cookie. Unfortunately, that meant going back to the store for more carbs but by this point I was married to the idea. I almost came unglued and went on a diatribe about processed food, the tainting of our food supply, how processed carbs overwork the pancreas, leads to metabolic issues, etc, etc. By the time I had all of my ingredients assembled, I was beginning to get excited about having a Nestle Toll House Cookie.
Meanwhile, in a medium skillet, cook the erythritol over medium low heat until completely melted, stirring constantly as it burns very easily.
Of course, that means I was in the danger zone and would not be able to trust myself around a tray of these chocolaty morsels so I decided to also make my low carb chocolate chip cookies that I’ve been making for years. I know I like them and maybe I could tempt myself with these so as to not completely demolish the real cookies. My other thought, was from a completely scientific perspective … maybe it would be good to have two ends of the chocolate chip cookie spectrum in the same room, at the same time, for comparison of course (grin).
Working quickly, spread the coconut caramel mixture in an even layer on the cooled cookies (a butter knife works well for this).
