My goal in updating these three popular veggie dishes was to make them as irresistible and comforting as the originals, eliminating unnecessary calories without making them feel austere — it's the holidays, after all! Instead of heavy cream or half-and-half, I use lower-calorie but equally rich evaporated milk, and I flavor the casserole with way less cheese than most recipes call for — but you don't need as much when you call for bold extra-sharp cheddar. When I first set out to develop these three side dishes I meant them for celebratory meals.


With a bounty of bright spring vegetables popping up in markets and gardens, there’s plenty of fresh produce available to make delicious and eye-appealing veggies to serve at your Easter feast. These three recipes use roasted, pureed butternut squash in ways usually reserved for cheese — and you’ll never even miss it.
Whether roasted, shredded or sauteed, Brussels sprouts add a flavorful yet healthy component to any fall feast. Fiber-packed and full of flavor, these vegetable side dish recipes will round out your dinner and won't take long to make.
