To make this hearty and tasty skillet dinner I simply browned some ground turkey in my cast iron skillet (a nonstick skillet works as well), chopped up several of my favorite vegetables and added them to the turkey, then topped everything with some shredded cheese. Luckily, there are a few kitchen appliances that can make cooking Thanksgiving dinner just a little bit easier. Not only does it cook faster and more evenly with the carrots, but it tastes better (if the thicker ones are all they happen to have they will work okay too). Wondering about making a big batch for a summertime party and would prefer not to keep it hot for extended periods and wrecking the veggies.


The tendency when you don’t feel like cooking is to either go out or pop something in the microwave. This summer, try to eat better by cooking up fresh, seasonal vegetables in your electric skillet. Also, I recommend using the Kraft light dressing with this recipe because it has a thicker consistency than most italian dressings which will help the dressing coat the chicken and veggies better (and bonus it’s skinnier than the traditional oil heavy versions). Over the past year I have gone from cooking meat dishes, to vegetarian, and now I even cook vegan meals for them.
I chose to use zucchini, summer squash, green beans, and tomatoes as the vegetables in this skillet dinner, but you could definitely mix it up and use whatever you have on hand. Cook about 6 - 7 minutes, rotating once halfway through cooking, until chicken has cooked through (meanwhile, chop asparagus and tomatoes).


Added some cooked brown rice in with the veggies to bulk it up a little and it was fantastic! Cooking vegan meals has actually allowed me to experiment with a lot of different dairy and meat alternatives that I might not have normally tried. Being able to experiment with different foods and cooking techniques keeps the job fun and exciting. Add asparagus and carrots to skillet, season with salt and pepper to taste and cook, stirring frequently, until crisp tender, about 4 minutes.
