Unrefined carbohydrates are the most important carbohydrate component of your child's diet. Carbohydrates are important and necessary for a child's optimal growth, development and performance.
I find it interesting that most people consider vegetables, and fruits to a lesser extent, to be the ideal food that all humans should eat. I’ve also recently seen more and more people claiming that vegetable oils lead to inflammation and metabolic problems, and that only with this trigger in place does carbohydrate consumption cause trouble.
The primary role of carbohydrates is to provide the body with energy, and for the brain and nervous system carbohydrates are the preferred fuel source. Carbohydrates are divided into two categories: simple carbohydrates and complex carbohydrates. These are the carbohydrates you should emphasize, whereas refined carbohydrates such as store-bought breads, white pasta, white rice, packaged foods, cookies, cakes and candies are the ones to try to limit.

While many children tend to eat high-glycemic foods such as sugar, candy, breakfast cereals and white potatoes, the best carbohydrates for kids are the slow-digesting, unprocessed, high-fiber carbohydrates. The simple reason is that before I would eschew the salads and choose low-fat, grain- based foods like rice, pasta, and bread as my staple. Carbohydrate-rich foods are obtained mostly from plants and are essential to a child's health. Simple carbohydrates include naturally occurring sugars found in fresh fruit and some vegetables, milk and milk products, as well as added sugars in concentrated form such as in honey, corn syrup and sugar. An easy way to remember this is to provide your child with carbohydrates that are found mainly in the produce section, in the form of fresh fruit and vegetables, and in the form of whole grains.
These types of carbohydrates tend to be the highest in vitamins and minerals as well as other nutrients necessary for your child's optimal growth and health. However many children tend to eat carbohydrates that fail to provide them with adequate nutrients for optimal growth and development.

Unrefined carbohydrates offer children increased vitamin and mineral intake, higher fiber intake, enhanced satiety as well as better blood sugar control.
The Academy of Nutrition and Dietetics recommends carbohydrates account for 45 to 65 percent of total daily calories in your child's diet. While carbohydrates are critical to health, the quality of the carbohydrates your child eats is also important.
Richard Feinman for putting this panel of low-carb experts together to come to a clear-cut definition of what low-carb means.
