“Pisco’sgot an innate funkiness
to it,”Schultz says. “It remindsmea
littlebit of a cachaçaor funky rum.”
InCharleston, SouthCarolina,
CullenWyatt, beveragedirector
ofTheMacintosh, created aPisco
Shandy,madewithpeach juice,
peachdrinking vinegar, saisonbeer,
and a thyme garnish.“Piscohas
a slightly elevated, above-neutral
grade in spirit flavor, so there is not
a tonof in-your-face flavor," he says.
“But it’s anicebackgroundnote.”

Combine all ingredients in a shakerwith ice. Shakewell and strain over
