I’ve been reading a lot about the Paleo diet recently, looking forward to trying this out! I hate posting a bad review cuz I usually love all the paleo recipes I find but this was pretty bad. Hi I'm Heather, the voice and girl behind Multiply Delicious, a blog where I share my passion for cooking and baking Paleo. When I worked at the Harvard School of Public Health, there was a little bakery in the Longwood Galleria that served delicious “Morning Glory” muffins, which were packed full of raisins, nuts, and other good stuff. Coat muffin tin with non-stick cooking spray (or use paper liners) and divide batter among six cups. I used 1.25 cups whole wheat flour instead and it was a chewier muffin, but that is what I prefer! I actually made 6 big muffins and 6 tiny ones with this recipe, and they all turned out great.
Divide the dough into 15 paper lined muffin tins and then bake for 20 – 24 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

I had some organic carrots left over in the fridge and did not know what I was going to do with them, it was not an option to throw them into the trash, so I went to the web just to look for recipes and I came across yours.
I have several friends who are very serious with CrossFit, who also follow the Paleo diet – they rave about it!! They were HUGE, so I only treated myself to one every once in awhile, but it was a muffin I will never forget. I grated those carrots and ended up with 8 cups so I took and used my foodsaver to vacuum seal 4 bags, 2 cups each and placed them in the freezer, I love the smell of spices such as cinnamon, nutmeg and ginger in the fall, it just makes the home smell so good and what makes it even better I already have all the ingredients in my cabinets so I can’t wait to make these, thanks for a great recipe!!!!
I stumbled on this recipe while searching for a healthy paleo muffin recipe, and I’m so glad I found it and your blog! But I’d want the carrot cake to be lighter than my usual banana bread so wondering if Honeyville is the way to go.
And I have to admit, in my 4.5 years of blogging, this is probably the best muffin I have ever created.
I might make these for Thanksgiving to replace rolls – roast turkey, a green salad, and one of these muffins would make a really delicious, festive meal! I also used pumpkin, added more carrot, added a chopped apple and omitted coconut and they turned out perfectly!


I’ve been going Paleo for just a week, but I was craving for something sweet, this was perfect.
I’m currently eating a mostly paleo diet as part of my journey to heal my gut and recover from chronic fatigue. This muffin recipe looks delicious – thinking I might need to make this and share with them Hope you’re well!
No longer paleo but I personally can tolerate oats and don’t like to bake with an abundance of almond flour! In the meantime, I am going to follow this recipe and whip me up some amazing carrot cake muffins.
