Feeding the craze (so to speak) is the opening of Brodo in New York, chef Marco Canora's East Village takeout window devoted solely to broth, offered in a variety of flavors—and presented in coffee cups. But Gelula insists that bone broth will find fans beyond the diet craze du jour, citing Dr. Throw it in a thermos or a travel coffee mug, head out, and no one will know that it's not coffee or tea you're drinking en route to the office, but bone broth—and while it may lack the bright green, visual appeal of kale-based beverages, you might just prefer the cozy taste to drinking your salad.
