Kerala Beef Masala and Beef Roast (Varattiyathu)November 12th, 2008Here is the recipe for making Kerala style Beef in two ways - Nadan Beef Masala and Beef Roast.
Add the pressure cooked beef along with its gravy to the above pan and mix everything well. Cover and cook on medium low flame for another 10-15 minutes, till the gravy thickens and is finely coated on the beef pieces.
To make Beef Dry Roast or Beef Varattiyathu, uncover the pan and roast the beef masala on medium high flame for around 10 minutes till the water evaporates completely and the beef is dry and brown in color.


I can’t believe I still haven’t blogged about one of the most famous non-vegetarian preparations from Kerala, the good old beef fry! Stir in the cooked beef mixture to the pan, and saute on medium heat for about 15-20 minutes till it is completely dry.
You can prepare Beef with a nice thick, masala gravy known as Beef Masala, which can be served with Rice or Rotis. Succulent beef pieces cooked in freshly ground spices and sauteed dry with onions and coconut slices, this is one of those famous Thattukada dishes.
While the beef fry is not fast food, the fact that time works in favor of the flavors in this dish and it actually tastes better after reheating makes it an ideal candidate for the fast paced Thattukadas. More than the beef , its the yummy flavour of curry leaves, coconut and spices that makes my mouth water!
I’ve eaten only by accident My friend says I should eat this dish to get the real taste of beef!


Then add marinated beef and mix well and put 2 cups of water and close the pressure cooker and cook for about 12 whistles. Beef Masala can also be pan roasted to make Beef Roast or Erachi Varattiyathu which is completely dry. I don’t think I can ever recreate that exact taste, but over time I have come very close to the taste of that Thattukada beef fry.
