Of all the things we do for our health, I think we all find this to be one of the more enjoyable efforts – at least once we get the hang of it. Whether as hot drippings now or precious spoonfuls later, these fresh roasted fats are perfect for braising meats or sauteing stir fry. The fattier the fish, the more chock full it generally is of healthy omega-3s (particularly if it’s wild caught). A side note: if you haven’t been able to tolerate low fat milk in the past, don’t write off dairy just yet.
Almost forgot to add: Somewhere between 50% and 75% of my daily calories come from healthy fats. I made my own tallowish stuff using the fat that floated to the top of an ox-tail stew I slow-cooked in a crock pot. Bacon is terrifically flavorful, and I just made some awesomely fatty lamburgers last night. Since we’ve been eating Primal my son cooks his morning eggs in bacon grease and he thinks it’s the greatest thing EVER! Eventually I learned that these are all laden with trans fats and chemically altered to remove the nasty smells. I am not the flower hair lady, but I do make yogurt from coconut milk (full fat, no additives). It only serves to reason that the best source of energy for the human body is saturated fat. You need at minimum two and five serves a day, but with our lifestyles nowadays, our bodies need all the nutrition they can get, so aim for more.

Choose healthy fats, such as coconut oil, cold pressed extra virgin olive oil, flaxseed and grapeseed oil.
Alternatively, coat the skin of whatever fowl you’re cooking with a lavish dollop of duck fat, and you’ll have a bird so succulent and skin so crisp it’ll make you cry over your carving knife. When the stew cooled in the fridge, I skimmed the fat that congealed at the top, reduced it under heat, and then fried up some sweet potato fries in what was left over. I used to get Liberte kefir, which has 6g of fat per serving, 2 of those saturated, so no low fat business there. It’s just resources that I have collected over the years to help people understand that we have been fed a load of bologna regarding saturated fats.
And coconut oil (thanks for the tip Jess!) We are taking baby steps towards eating better, although I have always steered clear from most processed foods all my life.
I’m 36, in a healthy weight range, not on my couch all day (five kids), and eat NORMALLY. Saturated fat does not contribute to heart disease and there has been a lot of research that proves it does not. She loves creating (and eating) healthy recipes, particularly the sweet treats made guilt free. I have written several posts that get a lot of discussion about whether saturated fats are healthy. When we need it, out body calls for the release of this SATURATED fat to supply energy for our body. And replace, at least in part, they must, or experience the inevitable crankiness and hunger (and possible failure) associated with not eating enough food. Anyone who’s roasted Brussels sprouts with bacon grease or drizzled chicken or goose fat over mashed turnips knows what I mean here. Whether it’s a splash of macadamia nut oil on a salad or a tablespoon of goose fat in a stew, fat can be a finishing touch like no other.

It takes a LOT less saturated fat to keep us going than it does a relatively low caloric density food such as grains.
Some people will struggle with fat loss because of too many nuts in their diet, so trial your tolerance level. Fats don’t make you fat!

So, relish those fully skinned chicken thighs, fatty roasts, and offal parts – and the fact that you got a good deal on them.
