I believe my reality about cooking fish has been distorted by watching too many chefs prepare it on cooking shows. Leave them in the fridge overnight or thaw them under cold running water for about 10 minutes. Purchasing fresh fish is always a little daunting but most Kenyan supermarkets and butcheries are always stocked. When I have fish fillet in the house, I am always filled with endless ideas how to prepare it. A few days ago, I prepared a delicious and simple crispy fish fillet with Kenyan Ugali and veggies.
