If I were to try baking it first I think the panco bread crumb mixture might need a little melted butter, which may defeat the purpose for baking it. I am definitely planning on trying these, but I’m wondering if you can bake them instead of frying them?
Thanks for this recipe, I was given tons of zuchinni this week and thought about the appetizer from Maggiano’s.

One of my favorite, and one of the easiest, ways to make zucchini is to just slice it up and pan fry it in a little bit of olive oil. I was diagnosed with severe Ulcerative Colitis in 2004 and erroneously told by a gastroenterologist that I would spend the rest of my life on prescription meds. Since there is so much misinformation, disinformation, and conflicting information on the internet and in this world about what is healthy, what is the best natural route to health, what works, what doesn't work, etc., most of what we find ourselves doing is trial and error to see what works for us because every one of us in unique and different and as such has different nutritional and physical needs, weaknesses, and conditions. In July and August it is necessary to have a stack of recipes to use up zucchini It is everywhere.
Can you do them in oven (bake or broil) instead of frying them as I don’t want to mess with oil. I still haven’t gotten the hubby onboard with zucchini, but this may be the recipe to do it!


My name is Christin and trying new foods and experimenting in the kitchen are my greatest passions. If you want to keep it healthy you can just follow the recipe below and it will taste just fine. The famous franchise specializes in delicious cuisine of all kinds, and pretty much never disappoints. Since it’s football Sunday, I decided to experiment with my Panko Bread Crumbs to create an appetizer my family and I can snack on at home. I like to slice it lengthwise, into little strips, almost like wide matchsticks, rather than across and into circles. I began researching and studying natural alternative treatments and discovered the Specific Carbohydrate Diet (SCD). Information that I wrote about on this blog several years ago may no longer be true for me.
It can be cured, your body can heal from it, and it is not a life sentence of meds, surgeries, and illness. I make all kinds of things with it-  Dark Chocolate Zucchini Muffins, Lasagna, Moussaka, Chocolate Sheet Cake, and even pancakes.
Coated in Panko crumbs with a little Parmesan cheese, these crispy Fried Zucchini Chips make a tasty summer treat. I would shpritz the breaded zucchini lightly with a good olive oil before placing them in the oven. But I think that the butter and olive oil would add more flavor and moisture to the breading so it would crisp properly. Cover a baking sheet with tin foil and spray an oven safe cooling rack with non stick spray. Although Maggiano’s recipe remains a secret – I’ve come pretty close to duplicating this favorite and couldn’t wait to share it.
Add battered zucchini and fry for 2-3 minutes or until golden brown on bottom side, turn zucchini and repeat.


I’ve already made a copycat of their chopped salad so I think this is going to be next, and soon! We tried many menu items from the extensive appetizer and small Plates & Snacks selections, and my favorites were the Crispy Crab Bites, Avocado Egg Rolls, and the Fried Zucchini!
Within a year, I was off all meds and had brought my body and digestive system back into balance and a state of health and healing. And keep in mind that although the addition of butter and olive oil will increase the fat content, it’s not by much.
If you’re serving them to a crowd, allow them to cook just a bit longer to become extra crisp and then you should be able to place them on a platter without them becoming soft.
That way they get soft all the way through in the short amount of time the zucchini is in the oil.
If you’re just serving them to your family, leave them on the rack and family can help themselves. Shake Parmesan Cheese over fired zucchnin right before serving.  Serve hot with Lemon Aioli dipping sauce.
However, it may be where you are and the information might be helpful to you on your journey. In a second pie plate or shallow bowl, combine Panko crumbs, Parmesan cheese, and ¾ teaspoon salt. I like to eat it accompanied by some SCD legal tomato sauce or barbecue sauce since zucchini tends to be a bit bland on it’s own.
