My French Pot is a vintage copper Dutch oven that was not vintage when I purchased it some forty years ago. When I got married and started to outfit my culinary room, it was my desire to buy only pots made in France that were tin-lined, copper pots with brass handles. I purchased all of the basic pot sizes in order to cook the proper way, as I imagined, as though I had graduated from Le Cordon Blue. As a testament to quality things that last a long time, I dedicate this post to tin-lined copper pots. The only time I had a problem with one of my tin-lined pots, was when I boiled a syrup in it far too long and the tin blistered. THE LARGEST POT HAS ONE SMALL SPOT THAT LOOKS LIKE IT HAD SOMETHING PUT ON IT TO CLEAN IT AND IT IS VERY NICE AND SHINY LOOKING.
I had to take it to a retinning expert and have it retinned. Another time I wore down the tin lining by aggressively scrubbing with a brillo pad.
Rub outside of veal with oil and sprinkle with remaining ? teaspoon salt and remaining ? teaspoon pepper. Transfer veal to a small roasting pan or Dutch oven.
Roast veal 1 ? hours. Remove foil and baste veal with stock, then roast, uncovered, until well browned and thermometer in stuffing registers 190 degrees F. Serve warm or at room temperature. I bought very large brussels sprouts and sliced them in half.
