May 3, 2012 by TheHarriedMom 5 Comments Keeping with my goal to be a little more adventurous with my grill meals, this week I’m serving up Garlic-Lemon Rotisserie Chicken. Rotisserie chicken is a popular meal option these days – from fast food restaurants to the deli counter at your supermarket to wholesale clubs (a CNBC documentary I saw about Costco last week said they sell 55 million of them a year!), and I’m telling you, it is an easy way to cook chicken! Now technically since I’m using a rotisserie it’s roasting, not grilling – but since I’m doing this outside on the backyard BBQ, I’m saying it counts as a grill recipe, so forgive me! Make sure your grill is pretty high but not overly hot –use a medium-high heat setting, and make sure you don’t ignite the burners right under the chickens or else it will cook too quickly, dry out or even catch on fire!  Indirect heat is how you do it here.  Just attach your spit to the motor and let those chickens go for a spin!
Turn grill on to medium-high heat, not turning on burner directly under birds, and let it heat up to about 300 to 350 degrees. Remove from the rotisserie and let stand for 5 to 10 before cutting into pieces and serving.
I had the opportunity yesterday to grill some chicken leg quarters on my gas grill and everybody raved about how moist they were and that the meat just fell off the bone.
Once you get your grill warmed up, I like to wipe some olive oil on the grates to keep things from sticking.
After the second 20 min cooking period, flip them back over so that the skin side is up, coat that in BBQ sauce.
I had a lot of trouble cooking chicken leg quarters in the past, after lowering the heat and leaving them on the bone side a little longer they turned out great. Mine turn out great, I just remember no high heat, just medium and I use Reynolds no stick foil on my burners, so no clean up on the grill.


Never, ever, ever use a spray bottle of water for flare ups unless you want to buy a new gas grill every year. Be sure to properly marinate and grill it, don’t settle for an hour or two of marinating and follow tips listed at bottom of recipe for properly grilled chicken.
Food that is cooked slowly and in a constant rotation, helps to self-baste the food, providing a flavor and tenderness that are hard to achieve cooking any other way. They’re not just great for roasting whole chickens, but also good for making beef or pork roasts and if you’re really into it, a leg of lamb or a whole pig!
I forgot to turn off the other burners but only 2 out of 10 pieces got burned and they were still delicious.
Lowes is delivering my first propane-powered BBQ this afternoon and I really want to cook chicken but I was clueless. I didn’t like these ones much so I’m really happy to hear you say that =), thanks! So to be safe we removed our thermometer that we keep in our oven (just because the oven is ancient) which gave us time to finish cooking the fixings that went with our chicken. I had flare ups so I cooked indirect and boosted the burners up to medium holding temp to 350.
I made this recipe because I love chicken for dinner and I wanted a new recipe to add to the rotation. MY BBQ has iron grates that allegedly help to distribute heat evenly, so I’m excited to jump in and give it a try. This is an exciting one that I’m certain is going to be made in my home quite frequently.
Chicken skin tends to melt and flare up around 400° leading to black chicken that nobody wants to eat.


Pull the leg quarters off the grill and let them rest for a few minutes on a plate then enjoy! All of the flavors of this simple marinade blend so perfectly together and compliment the chicken amazingly well. Pour remaining mixture over the chicken, cover dish and allow to marinate 8 hours or overnight in the refrigerator.
After the first 20 minutes, flip them over and coat the now cooked bottom with a BBQ sauce of your choice. If you have leftovers – which is unlikely, they would make an incredible filling for tacos.
Place chicken on grill and cook (with lid closed) 5-8 minutes per side until juices run clear (cook time depends on the thickness of the chicken, internal temp should register to 160 when done), baste each side of chicken with reserved marinade during the last minute of cooking. For the mouth watering grill marks brush the grill with olive oil before cooking and then when flipping to opposite side, this also prevents sticking as well. Don't press down on chicken when grilling or poke continuously, this will release the juices and that delicious marinade.
Don't overcook or chicken will be tough, for tender chicken cook until internal temperature registers at 160 degrees on an instant read thermometer.
