I recently purchased a cast iron skillet and it is quickly becoming the only skillet I will use. One of the best benefits of using a cast iron skillet is its ability to be used on the stove and in the oven. The skillet retains heat very well.  Cooking, frying, and browning foods on the stove top just got a lot easier! Many people believe that over using teflon coated pans can be unhealthy due to the coating eventually ending up in the food.
Flattening the chicken also encourages crisp skin, since most of the skin is in contact with the hot pan.
Adjust oven rack to lowest position, place 12-inch cast-iron skillet on rack, and heat oven to 500 degrees.
With chicken breast side down, use kitchen shears to cut through bones on either side of backbone; discard backbone. I didn’t really know what risotto was, much less how to prepare it, so when I came across a sausage and asparagus risotto recipe in a Kroger circular I decided to try it.
This is the second time we had been to a Lodge outlet store, with the previous visit made to the store in South Pittsburg, where Lodge is headquartered.
It dealt with campfire cooking, but most of the cooking was done on, or in, an indoor hearth.
For those of you not familiar with Colonial Williamsburg, VA, it is a restored village that stretches over 301 acres, and includes 88 original 18th-century structures.
Civil War re-enactments, restored villages like Williamsburg, or Old Sturbridge Village are great places to see how colonial cooking was done. Well, it turns out, you can pair your nourishing foods of pleasure with cast iron cookware to increase health benefits. She has been on a path of health promotion and behavior for more than 15 years and loves discovering new ways to bring attention and intention into everyday life. Achieving crisp skin is even easier with a cast-iron skillet, because the pan is able to maintain very high cooking temperatures.
Reduce oven temperature to 450 degrees and roast chicken until well browned, about 30 minutes.

Plus, the hot bottom and tall sides of a well-seasoned cast-iron pan create a great crust on the cookie.
Continue to cook, stirring constantly, until butter is dark golden brown, has nutty aroma, and bubbling subsides, about 5 minutes; transfer to large bowl. Transfer skillet to oven and bake until cookie is golden brown and edges are set, about 20 minutes, rotating skillet halfway through baking.
She, like I, sometimes became frustrated when bacon slices curled on the ends and as a result cooked unevenly.

We set out to produce perfectly cooked chicken with crisp skin that could be on the table in less than an hour.
Transfer chicken to carving board, tent loosely with aluminum foil, and let rest for 15 minutes. After cooking the sauce, we emptied the skillet and layered the lasagna as we would in a casserole dish with the tomato-sausage sauce, a ricotta-egg mixture, no-boil lasagna noodles, and plenty of Parmesan and mozzarella. A trick that seemed to work out well for me was to cook the asparagus in the same skillet that I had browned the sausage. You can purchase a cast iron skillet that has been pre-seasoned, or you can season it yourself by coating the inside and outside of the skillet with cooking oil and heating it in a warm oven for at least an hour, then repeating this process a few times before first use. We then put the chicken into the preheated skillet skin side down and cooked it until the skin was golden brown.
After a short 30-minute stint, we had the bubbly, cheesy top and perfectly cooked pasta we were looking for, all made in a single pan.
Stir in processed tomatoes, bring to simmer, and cook until sauce is slightly thickened, about 10 minutes; transfer to bowl. We cut back on butter and chocolate chips from our usual cookie dough recipe to ensure that the skillet cookie remained crisp on the edges and baked through in the middle while staying perfectly chewy. This gave the asparagus a really good flavor, and I had trouble not snacking on the asparagus before it went into the risotto! Thereafter, oiling the skillet each time you cook continues to season and build its non-stick surface, filling in the microscopic pores that are part of the cast iron surface.Cast iron also retains heat so efficiently and has such a high heat capacity that you use less fuel when you cook with it.
Flipping the chicken over for the remainder of the cooking time allowed us to take advantage of the hot, dry air of the oven to ensure that the skin remained crisp and intact.
We also increased the baking time to accommodate the giant size, but otherwise this recipe was simpler and faster than baking regular cookies.
I immediately grabbed one, although we did not have a clear plan for what we were going to purchase.
My cast iron obsession preference makes me re-read all those great family recipes that I ate growing up and rethink them using cast iron.

A simple mixture of extra-virgin olive oil, rosemary, and garlic brushed on the chicken during roasting elevated the flavor and crisped the skin further. I must admit that I don’t use the press as often as he does (frankly I forget), but it certainly makes the bacon lay flat and cook evenly. As we went along, spending about an hour in the store, Kathy and I walked up and down every aisle, making certain we had missed nothing. One of those recipes that I applied to cast iron recently was my grandmother’s peach cobbler. We had four-star, perfectly browned roast chicken with spectacular skin on the table in under an hour, thanks to the great heat retention of the cast-iron skillet; and as a bonus, the butterflied bird was a cinch to carve. Even when following Tip #1 above, an occasional slice will curl slightly, depending on the brand. The sloping sides of this piece of cast iron made the stirring go smoothly—a bonus since the recipe calls for 20 minutes of constant stirring! We called a family member as well as a friend of the family asking them if they needed us to get them anything while we were there.
Be aware that the chicken may slightly overhang the skillet at first, but once browned it will shrink to fit; do not use a chicken larger than 4 pounds. I used a slanted wooden spatula (pictured), normally used for woks, although any wooden spoon would do.I loved this recipe so much that I made it twice in three days!
Of course, I should point out that I never actually ate this peach cobbler at my grandmothers house when she was alive. According to the National Institute of Health, the recommended dietary allowance (RDA) for iron for non-vegetarian pre-menopausal women is 18 mg a day.


Rick definitely liked the regular version the best, but I must admit that the low sodium was more to my liking. I also got one of those rust eraser sticks I’d heard about, but have not had a chance to use.
With that said, foods cooked in cast iron may vary in iron content based on the age of the skillet and the amount of time the foods are heated. One of the best features of those great campout cobblers is the crust that forms in the cast iron. Therefore, I was fairly certain that I could (forgive me for saying this!) improve on my grandmother’s recipe. This can be especially advantageous for people at high risk of iron deficiency or anemia, including women of childbearing age, pregnant women, older infants and toddlers, and teenage girls.On the other hand, ingesting too much iron can be risky for those with a hereditary metabolic disorder called hemochromatosis or children under 3 years of age. To my knowledge, these are not sold on the Lodge website, although Lodge sells an enameled version of the same pan. At our church, my Sunday school class has a potluck brunch every first Sunday of the month. So two weeks ago, I decided to make my grandmother’s peach cobbler, but not in a glass dish, but in cast iron! This disease is characterized by fatigue, weakness, joint pain, and abdominal pain, as described by the Center for Disease Control (CDC).
A few months ago, I featured the larger enameled cast iron broaster pan in one of my posts, but this smaller cast iron casserole dish was something I’d been wanting for a long time.
Always check with your doctor before switching over if this is a concern.Discovering ways to cook with the durable and versatile cast iron can be very conducive to healthy eating. Also pictured here is a cabbage casserole which was the first recipe we tried in the new cast iron casserole pan. The recipe is pretty versatile, so the picture at the beginning of this post has apple on the left and peach on the right. To make the cobbler even more special, I made the original peach recipe specifically in my grandmother’s skillet that was handed down to me years ago.
Add the shallots to the pan, lower the heat, and cook gently for about 10 minutes, until soft but not colored. Turn the cast iron skillet back to low heat, pour in the egg mixture, and cook gently, without stirring, letting the eggs set slowly from the bottom up. When Kathy and I cook dinner using our Lodge cast iron wok (see my original review here), we usually cook enough food for our dinner and then have enough food for leftover lunch the next day. Cast iron is definitely superior to the standard casserole dish for this recipe as you probably imagine.

Place the cast iron skillet in the oven for 5 to 10 minutes (or longer, depending on your oven), until the frittata has just set. So, if there are four people eating, the food in the wok will be divvied out among them with none leftover.

So, if we pack our lunches right away, we run the risk of our food for that night’s meal getting cold. But if we leave the food in the wok, it tends to lose too much moisture while we’re eating. SherryA while back Rick posted information on the Cooking in Cast Iron website about converting cooking times and temperatures from slow cookers to cast iron dutch ovens. Therefore, I needed a lid!A few months back, I emailed customer service at Lodge asking them if they made a lid for the wok. So, while in the store, I found one of these rather large lids and carried it over to a display where a few woks were sitting.
Because we have limited room, I decided long ago that I was not going to collect cast iron simply to collect it, although some people greatly enjoy doing that. Other than what you see here, I also have my main cast iron skillet that has a permanent place on the stove top. I was bound and determined to see if these conversion numbers were really accurate.I began the process by preheating the oven to 325. I don’t yet know what brand they are, but I look forward to trying to figure that out.
I placed our new dutch oven trivet in the bottom of the 5 quart dutch oven and laid the 2 pound brisket on top, fatty side down.
My only other not-pictured cast iron item is a Wagnerware cornstick pan which I will have to take that rust eraser to before I can re-season it and get it back into working order.
Finally, pictured below are a few shots of the same rack above, but slightly enlarged so that you can see some of the items we have. I must admit that I had my doubts about the brisket being even close to done after that short amount of time.
However, I also know that true cast iron aficionados enjoy looking at other folks’ cast iron. So, enjoy and feel free to post any questions or comments in the comment selection of this post.
I left everything in for another 30 minutes just to be sure.Was the brisket going to be cooked through? One touch with a fork let me know the meat was just as tender as the slow cooking technique I had used for years.
