If you can’t afford probiotics on a regular basis, or you would like to supplement your existing course of probiotics, there are several excellent probiotic foods that can help repopulate your intestine. These foods include probiotic yogurt, kefir and fermented foods like sauerkraut and kimchi. Even better, forget the confusing labels on supermarket brands and make your own probiotic yogurt.

Probiotics are a vast group of living microbial organisms comprising normal gastrointestinal flora. We’re making a number of different varieties, including white radish kimchi and cucumber and carrot kimchi.


In the traditional methods, when kimchi was made at harvest and was meant to store vegetables through the winter, the head of cabbage would be kept whole. For our marinade we used green onions, garlic, ginger, coarsely ground cayenne pepper (sold in Korean stores as “red pepper powder”), and fish sauce. We recommend about a ? cup of both fish sauce and red pepper in 5 pounds cabbage for a moderately spicy kimchi. Keeping oxygen out helps assure that the bacterial species which develop are better suited to the anaerobic environment of the gut, creating a more probiotic mix of flora and preventing the kimchi from going bad as quickly. To accelerate the fermentation, you can leave it out at room temperature overnight, or for two nights. Using the right combination of these three elements is the best way to overcome a Candida overgrowth. Put simply, probiotics are good bacteria that are supposed to live in your intestinal tract. In 1965, researchers coined the term “probiotics,” though the concept and use of beneficial bacteria to promote health had been around since the early 1900s. They provide fuel for the probiotics already living in the intestine, favoring the good bacteria over the harmful ones.
Fructooligosaccharides (FOS), which occur naturally in garlic, onions, green bananas, zucchini, watermelon, and peaches, are another type of prebiotic. However, it is my experience that those who suffer from IBS-D (diarrhea predominant) or who are FODMAP-sensitive do not tolerate prebiotics; it exacerbates their diarrhea. In order to fight these invaders, the cells in the small intestine tightly line up next to each other, forming an impermeable barrier.  Probiotics assist the cells in maintaining these tight junctions.
Openings created between the cells may permit proteins or toxins cross the intestinal barrier.
Further down the GI tract, they must adhere to the surface of the small intestine and effectively populate the colon. Yogurt is the most common and familiar form of probiotic, which contains primarily Bifidobacterium and Lactobacillus species. However, if a patient is actively experiencing gastrointestinal symptoms from a known disease or disorder, I typically recommend they add an over-the-counter probiotic supplement to their daily regimen. Once the probiotics are released, they can adhere to the intestinal wall and support immune system function. However, one difficulty in creating a clinical trial is the wide variety of yeasts and bacteria species available. When independent companies test products, they find wide variability in the quantity and potency of live bacteria in each capsule. I do not recommend one particular brand over another, primarily because information changes quickly, and specific probiotics may be better-suited for a particular medical condition. Scientific studies have determined health benefits from 50 million to over 1 trillion colony forming units (CFUs) per day.
Strain, quantity of CFUs, serving size, health benefits, proper storage conditions, expiration date, and additional corporate contact information should all be included.
It may take two to four weeks for those symptoms to subside while the good bacteria insert themselves into the intestine. Charcoal tablets taken about two hours after the probiotics can help bind and remove the toxins. With do-it-yourself and convenience options, there are a variety of choices to share health and longevity with your family.
This article will outline a few of the key differences in the probiotic liquids, so you can make the choice that best supports your specific health needs. Nine small coconuts will make a half gallon of young coconut kefir, so this is an economical drink. Foods are always healthier when made at home, and you can adjust the ingredients to fit your taste. Our kimchi is tastier than store-bought kimchi, probably much healthier, and we’re eating more of it. The methods are essentially the same, so we’ll just show you the traditional Korean cabbage kimchi. The salt helps draw water out of the cabbage, preventing the kimchi from becoming watery or soupy, and also helps sterilize the cabbage for a more consistent fermentation.
The amount of fish sauce and of pepper is probably the biggest determinant of the kimchi’s taste.
Another trick you can do to jump start the ferment is to take a little bit of the juice from the previous kimchi and add it to the mix.
The purpose of salt is two-fold, to extract water and to get the fermentation started with a good mix of species. I got my current ratio from a member of my local WAPF group that interviewed a group of people that won ferment competitions.


Fungi grow much more slowly than bacteria but they ultimately triumph in any fermentation process.
While some people cut the cabbage into pieces first and then mix it into the bowl of spices, I think it tastes better when you leave the cabbage in halves. Its not entirely PHD compliant but it marries the traditional pickles in Northern India with the concepts in your recipe.
We still have not put the pickle in the fridge after 10 days, and it is holding great at room temperature here in Bangalore around 25C.

While this has prevented many types of dangerous illnesses, it has resulted in fewer beneficial bacteria living in our gut as well.

Studies have shown that some species are more effective in treating a particular disorder or disease.
In the short-term—days to a few weeks—these toxins can exacerbate the symptoms being treated and cause more gas, bloating, or diarrhea.
And there really is no limit to how you can use herbs, spices and other flavorings to make them even more delicious. Too much salt in the post-rinse fermentation would be antimicrobial and, while it would make the vegetables last a long time, would also hinder the fermentation and alter the mix of species. Also, Asians tend to tolerate sour flavors much better than Americans and will eat old kimchi. It’s better suited to making a smaller quantity of kimchi for household use, and also simpler which I think is important. For storage both during fermentation and while consuming, just place the bags in a bowl or bread pan or something in case of leakage.
So by taking a daily probiotic supplement, you are literally replenishing your gut with exactly what needs.
In fact, research suggests up to 80% of the probiotics you take never reach your intestine, where they can benefit your health. Avoid yogurts that claim to be probiotic but don’t list the specific strains of bacteria on the packaging. And of course your homemade sauerkraut is guaranteed to be full of healthy bacteria, unlike most of the stuff you can buy in the shops. They may also create their own flu-like symptoms including headache, joint and muscle pain, body aches, sore throat, general malaise, sweating, chills, or nausea.
Using a lot of salt at first and then rinsing helps extract water and gives a less watery kimchi.
Every family has a different recipe that gets passed down through generations and get changed a little each time.
