If you can’t afford probiotics on a regular basis, or you would like to supplement your existing course of probiotics, there are several excellent probiotic foods that can help repopulate your intestine. We’re making a number of different varieties, including white radish kimchi and cucumber and carrot kimchi.

In the traditional methods, when kimchi was made at harvest and was meant to store vegetables through the winter, the head of cabbage would be kept whole. For our marinade we used green onions, garlic, ginger, coarsely ground cayenne pepper (sold in Korean stores as “red pepper powder”), and fish sauce. In order to fight these invaders, the cells in the small intestine tightly line up next to each other, forming an impermeable barrier.  Probiotics assist the cells in maintaining these tight junctions.
Openings created between the cells may permit proteins or toxins cross the intestinal barrier.
Further down the GI tract, they must adhere to the surface of the small intestine and effectively populate the colon. Yogurt is the most common and familiar form of probiotic, which contains primarily Bifidobacterium and Lactobacillus species. However, if a patient is actively experiencing gastrointestinal symptoms from a known disease or disorder, I typically recommend they add an over-the-counter probiotic supplement to their daily regimen. Once the probiotics are released, they can adhere to the intestinal wall and support immune system function. However, one difficulty in creating a clinical trial is the wide variety of yeasts and bacteria species available. When independent companies test products, they find wide variability in the quantity and potency of live bacteria in each capsule. I do not recommend one particular brand over another, primarily because information changes quickly, and specific probiotics may be better-suited for a particular medical condition. Scientific studies have determined health benefits from 50 million to over 1 trillion colony forming units (CFUs) per day.
Strain, quantity of CFUs, serving size, health benefits, proper storage conditions, expiration date, and additional corporate contact information should all be included.
It may take two to four weeks for those symptoms to subside while the good bacteria insert themselves into the intestine. Charcoal tablets taken about two hours after the probiotics can help bind and remove the toxins. With do-it-yourself and convenience options, there are a variety of choices to share health and longevity with your family.

The methods are essentially the same, so we’ll just show you the traditional Korean cabbage kimchi. The salt helps draw water out of the cabbage, preventing the kimchi from becoming watery or soupy, and also helps sterilize the cabbage for a more consistent fermentation.
The amount of fish sauce and of pepper is probably the biggest determinant of the kimchi’s taste.
Another trick you can do to jump start the ferment is to take a little bit of the juice from the previous kimchi and add it to the mix.

We still have not put the pickle in the fridge after 10 days, and it is holding great at room temperature here in Bangalore around 25C.

Too much salt in the post-rinse fermentation would be antimicrobial and, while it would make the vegetables last a long time, would also hinder the fermentation and alter the mix of species. Also, Asians tend to tolerate sour flavors much better than Americans and will eat old kimchi. It’s better suited to making a smaller quantity of kimchi for household use, and also simpler which I think is important. For storage both during fermentation and while consuming, just place the bags in a bowl or bread pan or something in case of leakage.
So by taking a daily probiotic supplement, you are literally replenishing your gut with exactly what needs.
In fact, research suggests up to 80% of the probiotics you take never reach your intestine, where they can benefit your health. Avoid yogurts that claim to be probiotic but don’t list the specific strains of bacteria on the packaging.
