I have been dying to make breakfast cookies for forever but just never got around to it for whatever reason. When they were coming out of the oven, I was singing and dancing around the kitchen, I was so thrilled! These little cuties have no added oil or butter, they have fruit (banana and raisins) and healthy proteins and fiber.
I get super excited any time I bake something for the very first time and it turns out right, even after the 3rd or 4th try. She always made sure we ate something delicious before school every day. These muffins are one of her favorite quick and easy breakfasts. They’re a favorite because not only are they absolutely delicious, but they have only a few ingredients and use one bowl and spoon. When I was growing up, my mom always made something special for breakfast almost every weekend.
They taste like a dessert cookie, meaning my boys will eat them and think I’ve gone even crazier that I’m letting them eat sweets for breakfast!
I made banana cookies last week, and they were toooo soft and cakey, I know some people like those, but they were not for me.


These are the best muffins to make on a busy morning because they only take 5 minutes to put together and throw in the oven. You’ll find her sharing healthier, budget-friendly, family-friendly, and easy dishes with some yummy desserts thrown in, too!
These, however look perfect, and would be a wonderful breakfast cookie for me to enjoy after my runs. And when they finally turned out the way they were supposed to, I danced all over the kitchen! We recently bought a Vitamix blender and make smoothies all the time, especially for breakfast. I love the spicy pumpkin flavors, the moistness that it brings to baked goods, all while being lower in fat and calories. Scoop into prepared muffin tin and bake for 15-20 minutes or just until golden and tops spring back when you press on them.
I’m not sure any will be left for breakfast tomorrow … Thank you again for a great way to use those overripe bananas!
