A pickled product that does not list vinegar on the label is a good probiotic candidate, provided it has not been heat-processed during production. Home fermentation of vegetables preserves without the use of any pressure or heat unlike supermarket versions of the same foods. Improves the digestibility of the food and even cooked foods that are consumed along with it!
Sauerkraut is fermented cabbage, and like the name suggests, it has a pleasantly sour tang. Of course, sauerkraut is the perfect accompaniment for pastrami, on a hot dog, or alongside beer-braised brats. Another fermented cabbage condiment, kimchi is both spicy and slightly sour. Bon Appetit Magazine has saved us all a lot of trouble by finding their 8 Favorite Kimchi Brands from Across America. Stir a spoonful of kimchi into your soups, salads, or even pasta dishes just before serving. We all know what a pickle is, but, like sauerkraut, not all pickles are created equal. Most store-bought pickles are not raw, so make sure you read those labels carefully. Of course, pickles are a great condiment for sandwiches, but there are so many other ways to enjoy them. That said, a simple and delicious way to consume miso is a simple homemade salad dressing of tahini, miso, lemon, and water (to thin it out). You’ve probably seen bottled Kombucha, a fermented, lightly effervescent sweetened black or green tea drink, in supermarkets everywhere. But, note, not all Kombucha is probiotic rich because some brewers use pasteurization to help control the alcohol content in their products. Cheeses are excellent carriers for probiotics — their low acidity and high fat preserve and nurture the bacteria while they move through the digestive system. Both water and milk kefirs are loaded with beneficial bacteria but have different characteristics.
Chocolate probiotic bars are often kept in the refrigerated section of your grocery store (in some stores, they are kept in the refrigerated yogurt aisle). As our friends over at Wellness Mama note, soda hasn’t always been the high fructose corn syrup and artificial flavor concoction in an aluminum can that we know today. For hundreds of years (and probably much longer) cultures around the world have made various forms of naturally fermented “sodas” from sweetened herbal teas or fruit juice mixes. Feline immunodeficiency virus (FIV) is thought to affect over 11% of the cat population worldwide. Whilst the virus is not typically lethal, it can result in a higher occurrence of infections and degenerative conditions that can be stressful and uncomfortable for the infected cat. Many cats afflicted with FIV suffer from intestinal disorders such as colitis, chronic diarrhoea or inflammatory bowel disease. The transmission of FIV from one to cat to another requires saliva from an infected cat to enter the bloodstream.
FIV attacks the immune system of the infected cat, it targets the white blood cells responsible for dealing with infections. FIV positive cats have been observed to suffer more frequently from chronic diarrhoea than FIV negative cats. It is also thought that intestinal mucosal dysfunction associated with FIV positive cats disposes them to bacterial or viral infection. When the cause of the gastrointestinal stress is unknown, the diagnosis is often inflammatory bowel disease (IBD). The chronic diarrhoea associated with FIV can be stressful for both the owner and the cat, so any beneficial treatment is warmly welcomed. Treatment with probiotics (in the case of the study, Lactobacillus acidophilus) helped to restore intestinal homeostasis i.e. Probiotic treatment altered the release of inflammatory mediators responsible for inflammation of the intestines (that can lead to chronic diarrhoea).

The American Academy of Audiology estimates there are upwards of 5 million, perhaps as many as 30 million Americans occupationally exposed to noise levels greater than the OSHA Action Level of 85 dBA. Occupational exposure to elevated noise also entails largely unrecognized costs to organizations in terms of increased employee turnover, absenteeism, lowered performance and possible contribution to workplace accidents.
It should be easy to recognize that the need for occupational hearing loss prevention extends well beyond the obvious practical desire to preserve hearing. Basically, there are two types of instruments to measure noise exposures: a sound level meter and a noise dosimeter. A noise dosimeter is very similar to a sound level meter except that it stores sound level measurements and logs these measurements over time.  This approach provides an average noise exposure reading for a given period of time, such as an 8-hour workday. Area monitoring can be used to estimate noise exposure when the noise levels are relatively constant and employees are not mobile. In workplaces where employees move about in different areas or where the noise intensity tends to fluctuate over time, noise exposure is generally more accurately estimated by the personal monitoring approach.
Noise levels should be measured whenever there are significant changes in machinery or production processes that may result in increased noise levels; remonitoring should also be conducted to determine whether additional employees need to be included in the hearing conservation program. The Centers for Disease Control and Prevention publishes a Practical Guide for Preventing Occupational Hearing Loss which illustrates specific steps than can be taken to reduce the risk to your employees. A recent study investigated the effects of probiotics on the feline intestinal tract and found that they have the potential to reduce the severity of intestinal problems by restoring normal conditions in the gut. 1 The infection is not curable, so infected cats will live with the virus for the rest of their life. The weakened immune system increases the chance of infected cats developing secondary infections. Due to the high number of possible variations of the virus, it is also difficult to protect against all strains with a single vaccine.
It is known as Lymphocyte T-Cell Immunomodulator (LTCI) and it works by increasing the production of certain white blood cells (CD-4+ T-cells).
Whilst there are a number of theories that could explain this increase, a definitive explanation is yet to be found. If pathogenic bacteria establish themselves in the instestine this too can cause chronic diarrhoea. IBD is a chonic inflammation of the intestinal lining that occurs as a result of the body’s own inflammatory cells reacting continually and excessively. HealthTrak offers a simple way to track your pet's progress, helping them achieve a healthy weight and a long, happy life. But, there are also many everyday benefits of probiotic rich foods that can help us all. Probiotic side effects include a range of things from supporting the gastrointestinal (GI) tract, preventing inflammation, boosting immunity, reducing stress, improving your mood and alleviating conditions ranging from allergies to diarrhea. Hardick, founder of the Centre for Maximized Living in London, Ontario notes: “Conventionally, when people hear about probiotics, they typically think of yogurt or supplements. In short, as Alex Lewin, author of Real Food Fermentation explains not all fermented foods are pickled and not all pickles are fermented. The brands found in the refrigerated section of the market are likely to be raw so check the refrigerated section of your market for local and artisanal brands of sauerkraut. You can also ferment your own sauerkraut at home. Its like shredded cabbage but with a sour kick. Martyna Angell, author of The Wholesome Cook has a great blog post naming six things to make with sauerkraut other than a reuben that includes several raw sauerkraut recipes for sauerkraut kiwi smoothies, sauerkraut slaw and nori rolls. When using miso in soup, stew or another cooked dish, don’t add it until the end of the cooking process and remove the food from heat immediately since high heat can destroy the probiotic organisms. Dairy is an excellent environment for bacteria because the live microorganisms feed on lactose, a naturally occurring sugar in dairy products. If your wondering how cheese stacks up to other probiotic rich dairy foods, cheddar cheese was evaluated as a food carrier for the delivery of probiotic microorganisms and it was found that mature raw cheddar cheese compares very favorably with fresh yogurt.
Milk kefir, on the other hand, is made from goat’s milk, cow’s milk, sheep’s milk and, even, camel’s milk.
Milk sugars are broken down during the fermentation process, so kefir naturally contains less lactose than milk, and goat and sheep milk kefirs have even less. Using low processing temperatures to keep them intact, manufacturers are able to add probiotics to dark chocolate at up to four times the amount found in other forms of dairy.
Recently, Lea from Nourishing Treasures did a series of posts in which she tested 18 different sauerkraut fermentation set ups to see which ones were the best — everything from a recycled salsa jar to an expensive Harsch Crock.

How the virus affects an infected cat varies between individuals, some cats succumb to the direct effects of the virus, whilst other may suffer from secondary infections due to the virus’ effect on the immune system. Infected females can spread the virus to their offspring during pregnancy as the virus can be transferred in the uterus. One study did show the vaccine was able to protect an entire sample group from infection with one sub-type of the virus. Increasing the production of these cells can help reduce the immunosuppressive effects of FIV. Some pathogenic bacteria release toxins that contribute to poor gastrointestinal health and diarrhoea.

Known as a scoby (for symbiotic colony of bacteria and yeast), it essentially eats the sugar, tannic acids, and caffeine in the tea, and creates a cocktail of live microorganisms that many believe to be beneficial. Kefir also contains active lactase enzymes, which is why even some people with lactose intolerance can digest it with ease. The good bacteria inside green peas may raise the level of antibodies in your immune system.
She tested for the prevalence of lactic-acid producing bacteria, the absence of mold or other undesirable microorganisms, ease of success, and more. Some cats may even go their whole life without ever displaying symptoms, but continue to spread the virus.
The only drawback is that these gourmet items are rather expensive compared to the pennies per ounce it costs to make them yourself.
Scobys constantly grow and reproduce, and their offspring are something of a currency among kombucha devotees, who use them in homebrewing. A 2010 study published in the International Journal of Food Microbiology found that probiotics in dark chocolate survived the passage through the stomach and small intestine better than those added to liquid milk. These types of antibodies are often found in the lining of your airway and digestive tracts, according to the study.

If you want maximum probiotics in your sauerkraut (and I think we all do!), you’ll want to let your ferment go through the three stages of fermentation. The LABs (lactic-acid producing bacteria) dislike cold, and they cannot truly thrive in it (read: prolifically reproduce).
LABs prefer an anaerobic (oxygen-less) environment, and our goal is to keep those little guys happy, right?Aerobically (with oxygen) the yeasts in your ferment can be oxidized to form acetic acid (vinegar), which is not what we’re making here. Yes, you want some tang, but you can achieve tang without vinegar. The candida-preventing yeast Saccharomyces cerevisiae has the ability to shift from fermentative to oxidative depending on the level of oxygen available. Keep the oxygen out, and this friendly yeast can help your guts heal.So how do you know if your jar is keeping out enough oxygen?
I was blown away when we performed our pressure and vacuum tests and found it to be airtight.I just want to caution you about airtight jars. Due to the CO2 activity happening in the gaseous stage of your ferment, you must allow for an outlet for those CO2 gasses to escape. You want a jar with a combination of airtight seal with the ability to off-gas.For example, the CO2 can push out through the olive oil, and yet the oxygen can not penetrate. The jars with airlocks provide a tight seal around the lid, yet the airlock allows for off-gassing. The Fido has a vulcanized rubber gasket, which acts as an airlock, allowing CO2 to be released at a certain pressure, but not allowing oxygen to come in.So there are several options when it comes to jars, and the prices range from pennies to tens of dollars. Certain cheeses, such as gorgonzola or blue cheese, have been cultured to create a safe mold.
Some people show symptoms right away; others end up with mold sensitivities or other gut issues that evolve over time. I have experienced this myself — spoilage in the brine samples before I saw them with my eyes.
In fact, Jar #3, Water Baggy, had just a couple of decaying cabbage pieces on the top of the jar, trapped between the baggy and the glass. Founding Nourishing Treasures in 2006, Lea encourages others to take baby steps in the direction of health, providing natural alternative information that promotes health and prevents disease by using traditional foods and nature’s medicine.
Well made oil will not have botulism spores in it so of course it isn’t a risk leaving it on the counter. It is the combination of low acid food (the start of the fermenting process) and an oil that can protect the spores from the rising acid levels that makes it risky.Reply KristenM saysJuly 27, 2012 at 11:44 am Yes, but it starts out salty! Obviously there is a unsafe level or there wouldn’t be the advice about making sure your tomato sauce is acidic enough when canning it to prevent botulism. I have a few family members who need to restrict sodium in their diets, so this is of interest to me.
Mixing oil with a moist food however is dangerous and can be contaminated with botulism spores and be deadly, especially if you keep it in storage for a long time. A small amount of oil is not the problem however a large volume of oil all together (like topping a ferment) is the issue.
