After 4 weeks, you can refrigerate the sauerkraut, and it will keep for at least two months. The jar needs to stay at room temperature for up to 7 days, during which you will see lots of bubbles inside the jar. You can eat it immediately, but some recipes suggest you let it sit for a week or two in the refrigerator first, allowing the flavors to blend more.
