I did make my own pie crusts for this recipe but you can totally use store bought ones if you are short on time. At this point in the year, I’m looking for great ways to use the large quantities of delicious veggies I have in the kitchen.

4-5 cups prepped veggies of choice (I used a mix of carrots, peas, green beans, corn, potatoes, and broccoli. Place the tofu one piece at a time and don't overcrowd the pan, make sure the tofu pieces don't touch each other. If you are in a hurry, you could use frozen mixed vegetables, instead of dicing them yourself. Pick each tofu piece with wooden chopsticks with as little oil as possible and immediately dip the tofu into the curry sauce.
